Gyudon



Toinen mukava resepti löytyi myös Amy Kanekon kirjasta, ja T valmisti meille herkullisen Gyudon Sunnuntai-illalliseksi. Gyudon on ohuenohueksi suikaloitua naudan lihaa ja sipulia makeahkossa kastikkeessa riisin kera tarjoiltuna. Annoksen päälle kaadetaan rikottu raaka kananmuna, mutta minä nautin tällä kertaa omani ilman. Parhaimman tuloksen lihalle saa kun sen jättää pakkaseen pariksi tunniksi jähmettymään ja sitten leikkaa kun liha on kohmeista. Itsehän en keittiössä tässä vaiheessa pysty olemaan, koska jäisen lihan leikkuu-ääni pistää niin kylmät väreet selkään että huh! Nimimerkillä: minun seurassa mehujäätähän ei saa ikinä pureskella! Brrr....

Gyudon

1 sipuli
voita paistamiseen
500g naudan entrecoteta (tai muuta naudanlihaa maun mukaan)
1 rkl Sakea
1 dl valkoviiniä
3 dl vettä
3 rkl soijakastiketta
1/2 tl inkiväärimehua (raastetusta inkivääristä puristettua)
2 rkl sokeria
1 valkosipulinkynsi
suolaa

Siivuta sipuli ohuiksi renkaiksi ja paista pannulla voissa n. 5 minuuttia. Lisää Sake ja viini ja paista taas n. 2 minuuttia. Lisää vesi, soijakastike, inkiväärimehu, sokeri, silputtu valkosipuli ja suola ja sekoita hyvin. Lopuksi lisää ohueksi leikattu naudanliha ja paista kunnes liha on kypsää. Tarjoile kulhossa kumman riisin kera ja halutessa kaada päälle sekoitettu raaka kananmuna.

Another nice recipe was found from Amy Kaneko's book, and T prepared us a lovely Gyudon on Sunday night for dinner. Gyudon is extremely thinly sliced beef and onions in a sweet sauce, served with hot rice. You can also pour a mixed raw egg on top of your Gyudon when eating, but I had mine without this time. You can get the beef very thin if you freeze it for a while in the freezer before cutting it. I couldn't stay in the kitchen when T was doing this, the sound of cutting frozen meat just makes me shiver! I also get the same effect if someone is biting into an ice-lolly, brrrr....

Gyudon

1 onion
butter for frying
500g rib eye steak/s
1 tbs Sake
100ml whitewine
300ml water
3 tbs soy sauce
1/2 tsp ginger juice (squeezed from grated ginger)
2 tbs sugar
1 garlic clove
salt

Thinly slice the onion and fry in butter for 5 minutes. Add the Sake and wine and cook for another 2 minutes. Add the water, soy sauce, ginger juice, sugar, chopped garlic and salt and mix. Finally add the thinly sliced beef and cook until done. Serve in a bowl with steaming hot rice and pour on top a mixed, raw egg if wanted.

Sushi Rice Salad



Tätä salaattia tarjoillaan eräässä ruokaketjussa Lontoossa, ja ihastuin tähän jossain vaiheessa viime keväänä. Joten olin hyvinkin iloinen löytäessäni kyseisen reseptin lempikirjastamme "Let's Cook Japanese Food" (Amy Kaneko). Mukailin ohejtta hieman ja en esim. käyttänyt ohuita munakas-suikaleita ja sen sijaan lisäsin jättikatkarapuja salaattiin. Tummat seesaminsiemenet olisivat myös olleet kiva lisä esteettisesti, mutta niitä nyt ei tällä kertaa löytynyt. Kunhan vain riisi on hyvin valmistettu, tämä salaatti toimii miltei millä tahansa lisäkkeillä.

Sushi Rice Salad

250g sushi-riisiä

70ml riisiviina-etikkaa
2 rkl sokeria
1 tl suolaa

200g katkarapuja
150g kylmäsavulohta
10cm pala kurkkua
1 avokado
3 pientä kevätsipulia

paahdettuja seesaminsiemeniä
noria (merilevää)

Keitä riisi ohjeiden mukaan kypsäksi ja samalla kuumenna pienessä kattilassa riisiviinaetikka, sokeri ja suola kunnes sokeri ja suola ovat sulaneet. Riisin vielä ollessa kuumaa, kaada joukkoon puolet etikka-sokeri-liemestä ja sekoita riisin joukkoon kääntelemällä riisiä isohkolla lastalla. Maista riisiä ja jos tuntuu, lisää hieman enemmän etikka-lientä joukkoon. Kaada loput etikat katkarapujen päälle ja jätä sivuun marinoitumaan hetkeksi. Anna riisin jäähtyä huoneenlämpöiseksi.
Silppua kylmäsavulohi ja kevätsipulit. Kuutioi kurkku ja avokaado. Sekoita kaikki riisin joukkoon, ja lisää myös katkaravut nyt salaattiin. Koristele paahdetuilla seesaminsiemenillä ja suikaloidulla merilevällä.

This salad is served in one restaurant chain in London, and I was very pleased to find the recipe from our our favorite cookbook: "Let's Cook Japanese Food" by Amy Kaneko. I changed the recipe a bit to my liking and didn't for example use omelette strips and added prawns instead. Dark sesame seeds would have been lovely to add as well, but we didn't have them around. As long as the rice is cooked properly, I think you can use whatever you like in this salad.

Sushi Rice Salad

250g sushi rice

70ml rice vinegar
2 tbs sugar
1 tsp salt

200g prawns
150g smoked salmon
10cm piece of cucumber
1 avocado
3 spring onions

Toasted sesame seeds
Nori (seaweed)

Cook the rice according the instructions. At the same time heat in a pan the vinegar, sugar and salt until the sugar has dissolved into the vinegar. When rice is still hot, pour half of the vinegar into it and mix with wide spatula by folding the rice around. Taste and add little bit vinegar if needed. Let the rice cool to room temperature.

Pour the rest of the vinegar to the prawns and set them aside to marinade for a while. Chop the smoked salmon and spring onions and cube the cucumber and avocado. Add all of them to the rice and pour in the prawns as well. Mix and garnish with toasted sesame seeds and shredded Nori.

Nasi Goreng



Brittikeittiön konkari Rick Stein tekaisi yksi aamu kivan näköisen ja "pikaisen" Nasi Gorengin telkkarissa ja ajattelin ruoan olevan mukava Lauantai-lounas minulle ja T:lle. En sanoisi tämän Nasi Gorengin olevan mitenkään älyttömän pikainen, mutta ruoan kanssa oli kiva touhuta leppoisena Lauantaina. Indonesialainen Shrimp Paste on kyllä melko tujua tavaraa kun sitä yksinään haistaa (en kannata maistamista!) mutta antaa mainion maun valmiiseen ruokaan. Joten ei kannata säikähtää alkuvaiheessa.

Nasi Goreng

Marinadi:

500g luuttomia kanan reisiä tai rintaa
1 tl valkopippuria
1 rkl sokeria
1 rkl Thai kala-kastiketta
1 limetin mehu
3 valkosipulinkynttä

Maustetahna:

2 rkl ruokaöljyä
4 valkosipulinkynttä
50g salottisipulia
25g suolattuja maapähkinöitä
6 punaista chiliä (tai maun mukaan)
1 tl Shrimp tahnaa
1 tl suolaa

Loput aineet:

300g riisiä
1 rkl tomaattipyrettä
1 rkl Ketjap Manis-kastiketta
1 rkl soijakastiketta
5 cm pala kurkkua kuutioituna
8 pientä kevätsipulia silputtuna
suolaa
pippuria

2 kananmunaa

6 salottisipulia
ruokaöljyä paistamiseen

Suikaloi kananreidet ja laita ne sekä marinadi-ainekset kulhoon ja jätä jääkaappiin ainakin 2 tunniksi. Valmista sillä aikaa maustetahna laittamalla kaikki tahnan ainekset tehosekoittimeen ja aja tahnaksi. Keitä riisi miltei kypsäksi ja jätä sivuun jäähtymään. Riko kananmunat kulhoon ja sekoita. Kuumenna pannu ja paista kananmunista kaksi erillistä ohuenohutta munakasta, siirrä lautaselle jäähtymään. Kääri munakkaat rullalle ja leikkaa ohuiksi suikaleiksi.

Siivuta salottisipulit ohuiksi renkaiksi. Kuumenna n. 5cm ruokaöljyä paksupohjaisessa kattilassa ja lisää salotit öljyyn. Paista kunnes sipulit ovat ruskistuneet ja rapeutunut, poista kattilasta ja siirrä talouspaperin päälle jäähtymään. Muista olla varovainen kuuman öljyn kanssa!

Paista kanat pannulla ja siirrä sivuun. Varmista että pannu on kuuma, lisää tarvittaessa hieman öljyä salottisipuleiden paistosta, ja lisää maustetahna pannulle. Paistele 1-2 minuttia, ja lisää sitten tomaattipyre, Ketjap Manis-kastike ja riisi. Paistele pari minuttia ja lisää sitten kanat, kurkku, munakas-suikaleet, kevätsipulit ja soijakastike. Maista ja lisää tarvittaessa suolaa ja pippuria. Tarjoile Nasi Goreng kuumana ja ripottele päälle rapeat paistetut salottisipulit.


One day Rick Stein made a lovely looking and apparently "quick" Nasi Goreng on his programme, so I thought to try it out one Saturday. I wouldn't say the dish was particularly quick as it has quite a few different stages, but it was nice to cook on a lazy Saturday afternoon. The Indonesian shrimp paste blew me away with it's smell. How on earth that kind of stuff can make a dish taste nice?! Well, it did. So don't be afraid when you first get hold of it. I also didn't barbeque my chicken, just fried on the same pan first, moved aside and added it later on.

Oxtails - Vihdoinkin!



Jälleen kerran Siskot Kokkaa-blogi puski inspiraatiota meidän kokkailuun. Viime keväänä luin Nellen ihanista häränhännistä ja näin monien muidenkin ruokablogien testaavan reseptiä. Muistan että kerran yritin löytää häränhäntiä läheisestä supermarketista, mutta kun niitä ei jostain syystä näkynyt ollenkaan, tämä resepti jäi vähän unholaan. Siltikin se on vähän kutkutellut mielessä silloin tällöin ja kun viime aikoina kuitenkin näin häränhäntien palanneen markettimme valikoimaan, päätin jälleen yrittää. Ja oih ja voih miten odotus palkittiinkaan! Tahmaiset ja super-täyteläiset häränhännät vaativat tosiaan sen kolmisen tunnin hauduttelun, mutta kaikki oli kyllä sen arvoista. Me söimme lihat kunnon perunamuussin kera ja huh-huh! Tätä ruokaa voisi kyllä syödä vaikka joka päivä! Nellen resepti löytyy täältä. Minä käytin Port-viiniä kuten alkuperäisessä reseptissä mainittiin mutta omat variaatiot balsamicon yms. kanssa varmasti toimivat myös mainiosti.


Last spring Nelle from Siskot Kokkaa-blog made this amazing looking braised oxtail recipe which other food bloggers fell in love with. I wanted to try the recipe since then, but after failing to find oxtails I kind of forgot about it. However, the recipe popped up in my head once in a while and after seeing some oxtails in the local supermarket again, I decided to finally give this recipe a try. The oxtails were braised for more than three hours but it was well worth it. After taking them from the oven they were then glazed at the stove with the reducing gravy. And Oh My Goodness! The end result was the most succulent and rich meat ever with the amazing sticky and glorious glaze. We ate the oxtails with rich potato mash and to be honest I could eat this dish every day for the rest of my life. I added a bit more bacon and garlic than the original recipe was asking and also used a bit of celery which I found from the fridge. Also apparently if you don't have port, you can use a bit more red wine and some balsamic vinegar instead. Try it out!

Horseradish



Piparjuuritahnaa kuluu meidän taloudessa aika lailla. En ole kyllä varma josko tahna on kyseiselle tuotteelle oikea nimitys, koska kyseessä on enemmän kastikemainen versio. Vähän niinkuin apple sauce täällä on myös hyvin paljon omenahillon kaltainen tuote, mutta ei siltikään ole sama asia... No jos joku keksii kunnon suomennuksen 'horseradish sauce':lle, niin ilmoitelkaa!

Kaupan valmista piparjuurta siis käytetään paljon meillä, varsinkin pihvien ja Sunday Roastin seurana. Eräänä päivänä sain kuitenkin kasan tuoretta piparjuurta T:n äidin kasvimaalta ja päätin koettaa kastikkeen tekoa ihan itse. Seurasin Hugh Fearnley-Whittingstall:in reseptiä, ja hyvää tuli. Suosittelen tuoreen piparjuuren raastamista flunssaisille, siinä touhussa kyllä aukeaa vaikeammatkin röörit! Tätä kastiketta kannattaa kokeilla tosiaan pihvien tai paistien seurana, ja tahna on myös herkullista esim. paistetun makrillin kera.

Piparjuuritahna

n. 1 dl raastettua piparjuurta
125 g creme fraichea
3 tls siideriviinietikkaa
2 tls tulista sinappia (English mustard jos löytyy)
ripaus sokeria
suolaa
pippuria

Sekoita kaikki aineet keskenään, maista ja lisää aineksia maun mukaan tarvittaessa. Anna tahnan tekeytyä jääkaapissa hetken aikaa. Tahna säilyy hyvänä n. 2 päivää jääkaapissa.


The consumption of horseradish sauce in our household is quite massive. T likes the sauce with his meat and it's lovely with Sunday Roast, but we tend to always use the ready made ones from supermarkets. One day I got some fresh horseradish from T's mum's allotment, and decided to give it a go myself. I followed Hugh Fearnley-Whittingstall's recipe and it turned out lovely. I recommend grating the fresh horseradish for everyone with little bit of cold. That smell is capable of unblocking everything! The sauce is lovely with meat and Sunday Roast but give it a try for example with grilled mackerel as well.

No aijaa...


Tiedättekö sen tunteen kun olettaa jonkun ruoan olevan tosi hyvää ja se sitten osoittautuukin ihan muuksi? Semmoinen hienoinen pettymys ja "no aijaa"-fiilis? No tämän ruoan kanssa kävi niin. Jotenkin kermainen mac&cheese ja kukkakaalipaistos yhdessä topattuna rapealla pekonikuorrutuksella ei voi kuulostaa huonolta. No ei se pahaa ollut, mutta jotenkin vaan vähän mitäänsanomatonta. Nopea ruoka ainakin oli, joten jos pikaista arkiruokaa kaipaa tämä varmaan on ihan hyvä vaihtoehto.

Jamien pikainen Mac&Cheese

8 siivua pekonia
1 iso kukkakaali
500g makaronia
250g raastettua Cheddaria
4 paksua siivua hieman kuivunutta leipää
pari rosmariinin oksaa
2 valkosipulinkynttä
250g creme fraichea
suolaa
pippuria
Parmesaania

Lämmitä uuni 200c ja pistä pekonisiivut laakeaan uunivuokaan uunin yläosaan. Leikkaa kukkakaali neljään isohkoon osaan ja laita ne sekä pasta samaan isoon kattilaan kiehumaan. Keitä kunnes pasta on al dente. Kun pekonit ovat rapeutuneet uunissa, ota ne pois ja siirrä tehosekoittimeen leipäsiivujen ja rosmariinin kera. Aja hienoksi rouheeksi ja lisää hiukan oliiviöljyä jos näyttää ettei seoksesta tule tarpeeksi hienoa. Siivilöi pasta ja kukkakaali mutta säilytä n. 5 dl keitinvedestä. Kaada pastat ja kukkakaalit samaan vuokaan missä paistoit pekonit, muussaa kukkakaaleja hieman pienemmäksi ja sekoita joukkoon juustoraaste, creme fraiche ja puristetut valkosipulinkynnet. Kaada joukkoon myös 4-5 dl pastan keitinvedestä. Mausta suolalla ja pippurilla, ja kaada koko komeuden päälle pekoni-leipäraaste. Paista uunissa n. 10-15 minuuttia kunnes pinta on kauniin ruskea.


You know the feeling when you expect something to be really good and it turns out to be something totally different? The feeling of slight disappointment and a question "really?!" going on in your head? Well, it happened with this dish. For some reason creamy mac&cheese combined with cauliflower gratin, topped with crunchy bacon sounded more delicious than it actually was. It wasn't bad in the end, but just nothing special really. I think it lacked a proper cheesy sauce. At least it was very quick to make, so if you are looking for a fast dish to make after work, this could be one option.

Soba lessons


Eilen pääsin ihastelemaan Soba-nuudeleiden tekoa, ja miten kaunis taito-laji kyseessä onkaan! Tapasin vihdoin Mrs. S:n joka ehti kiireiltänsä piipahtaa pari päivää Lontoossa tällä viikolla. Mrs. S on hyvin intohimoinen Soban tekijä ja on perehtynyt prosessiin hyvinkin yksityiskohtaisesti. Hän on kiertänyt maailmaa etsien parhaimpia tattari-satoja, ja tutustunut tattari-jauhojen jauhamis-prosessiin. Hän myöskin järjestää Soba-kursseja kotonaan Los Angelesissa ja ainakin siellä Soba-buumi näyttää jylläävän melkoisella vauhdilla.

Mrs. S näytti eilen miten perinteiset Soba-nuudelit syntyvät. Hän mittasi tarkasti tattari-jauhot ja veden, ja tässä oli kuulemma oltava hyvinkin tarkkoja koska taikinaan vaikuttaa hurjasti ilman kosteus sekä jauhojen laatu. Illan aikana mainittiin joitain prosentti-osuuksiakin mutta meikäläiseltä ne kyllä menivät ihan ohi koska keskityin niin katselemaan Mrs. S:n vaivaus-tekniikkaan. Taikina vaivattiin mahdollisimman isossa astiassa ja lopputulos oli mahtavan sileä ja jämäkkä taikina, melko lailla samantyylinen normaalin pastataikinan kanssa.


Soba-taikinan kanssa oli oltava hyvinkin nopea, koska taikina kuivui nopeaa ja jos se pääsi repeilemään tai halkeilemaan sitä ei enää pystynyt korjaamaan. Mrs. S kaulitsi taikinan mahdollisimman ohueksi (eilen mentiin melko rustiikki-meiningillä, koska käytössä olivat ihan normaalit keittiö-vehkeet ammattimaisten Soba-välineiden sijaan), ja taitteli sen pieneksi paketiksi. Sitten mahdollisimman isolla veitsellä taikinasta veisteltiin ohuita nuudeleita.

Nuudelit keitettiin kiehuvassa vedessä n. 5 minuuttia ja heitettiin jääkylmään veteen heti sen jälkeen. Me nautimme kylmät Sobat dipattuina Tsuyu-kastikkeeseen minkä sekaan olimme laittaneet hieman wasabia ja kevätsipuleita. Soba on herkullista niin kylmänä kuin kuumanakin, gluteenitonta, ja erittäin hyvää ruoansulatukselle.

Yesterday I was lucky to learn how to make Soba noodles, and what a type of art it was! I finally met Mrs. S who was in London for couple of days and we had a great dinner together. Mrs. S is very passionate about Soba and has studied making it for a while now. She has travelled around the world looking for the best buckwheat crops and learned the milling processes for the flours. She also runs Soba-classes at her home in LA and it seems that Soba is a very hot topic around there at the moment.


Mrs. S showed us yesterday how the real Soba was made. She measured the buckwheat flour and water very carefully and apparently you have to be very strict about this as the end result depends a lot on correct measurements. Factors that you also have to take into account are humidity as well as the quality of the flour, and Mrs. S mentioned something about percentages in this stage, but I was already concentrating so carefully on her kneading that unfortunately I missed all that. The dough was knead in a massive dish and the end result was amazingly smooth and tough dough, reminded me quite a lot of a normal pasta dough. With Soba you have to be very quick as the dough dries out very easily, and if it cracks or tears you can't fix it. Mrs. S rolled out the dough as thin as possible (yesterday's Sobas were quite rustic as the equipment that we used were just from a normal kitchen) and then folded it in to a little package. Then with as big knife as you can get, she sliced really thin noodles out from it.


The noodles were boiled in water for 5 minutes or so, and then tossed into ice-cold water. We had the cold Soba dipped in to Tsuyu-sauce which we had spiced with some wasabi and spring onions. Not only Soba is delicious but it is also gluten free and great to digest!

Lime Pannacotta


Lauantaina saimme ihania ystäviä kylään kertomaan parin viikon takaisesta Perun matkastaan. Tein meille ison padallisen Vindaloo-currya, jonka kanssa tarjosin Sag Aloo-perunoita, riisiä ja kuminalla ja valkosipulilla maustettua jugurttia viilentämään curryn tulisuutta. Tarjoilu taisi osua ja upota ihan hyvin, koska toista lautasellista täyttäessään ystäväni kuuli että curry oli tehty lampaasta ja hänhän ei lampaanlihasta yleensä välitä ollenkaan!

Jälkkäriksi halusin jotain raikasta, ja tekaisin aamulla meille Lime Pannacotat ja tarjoilin herkun mintulla maustetun tuoreen ananaksen kera. Ihan hyvää tuli, mutta jotenkin Pannacotta oli jähmettynyt vähän liikaakin. Olin odottanut sen olevan melkein hyytelömäistä mutta meidän versiot olivat kyllä melko jämäkkää tekoa. En tiedä missä vika oli, mutta ihan hyvältä ne silti maistuivat ja ananas toi kivan raikkaan kontrastin kermaiselle pannacotalle.

Lime Pannacotta

250 ml maitoa
250 ml kermaa
25 g sokeria
1 limetin mehu ja kuori
3 liivate-lehteä

Laita liivate-lehdet pehmenemään veteen. Kuumenna maito, kerma ja sokeri kattilassa kiehumispisteeseen ja ota pois liedeltä. Purista ylimääräinen vesi liivatteista ja sekoita maito-kerma-seokseen. Purista mukaan limetin mehu ja raastettu kuori. Kaada tarjoilu-astioihin, anna jäähtyä ja siirrä jääkaappiin jähmettymään ainakin tunniksi.


We had lovely friends over for dinner on Saturday to tell us about their recent trip to Peru. I made a big pot of Vindaloo-curry for us and served it with Sag Aloo-potatoes, rice, and garlic and cumin spiced yoghurt to cool the spiciness of the curry. I think the dinner went down quite well because one of the guest was on her second serving of the curry when she heard that it was made of lamb. And normally she hates lamb!

For pudding I wanted to make something fresh, so I tried a Lime Pannacottas and served them with fresh pineapple and mint. It was tasty, but for some reason the texture of the Pannacotta came out quite thick. I was expecting it to be almost jelly-like, but our ones were pretty solid. I'm not sure what the problem was, but they tasted alright and the pineapple gave a nice contrast to the creamy Pannacotta.

Lime Pannacotta

250 ml milk
250 ml cream
25 g caster sugar
1 lime, juice and rind
3 sheets of gelatine

Put the gelatine sheets in the water to soften. Bring the milk, cream and sugar in to the boiling point and take out from the stove. Squeeze the excess water from the gelatines and add to the warm milk-cream-mix. Add the lime juice and the grated rind and pour the mixture into the serving dishes. Let them cool and move into the fridge to set at least for an hour.

Ihan ite tein!



Makaronilaatikko on ruoka mikä tuntuu niin arkipäiväiseltä, mutta huomasinpa tuossa että sitä ei ole tullut tehtyä viimeiseen kuuteen vuoteen kertaakaan! Jostain syystä tuli tyttöjen kanssa puhe kyseisestä herkusta ja tänään lounasta miettiessäni päätin pitkästä aikaa tekaista vanhan kunnon makaronilaatikon. Hyvää tuli ja maha niin täyteen että sohvalta ei meinannut ylös päästä. Toivottavasti ei mene kuutta vuotta seuraavaan kertaan. Täältä ei muuten normaalia makaronia löydä kuin suuremmista supermarketeista, joten sen sijaan tuli sitten käytettyä penne-pastaa tällä kertaa.

Perinteinen makaronilaatikko

200g makaronia
1 sipuli
300g naudan jauhelihaa
suolaa

Keitä makaronit melkein kypsiksi. Paista pannulla sipulit ja jauhelihat ja mausta suolalla ja pippureilla. Sekoita munamaito ja lisää sielä vielä ripaus suolaa ja pippureita. Sekoita makaronit ja jauhelihaseos keskenään jaa kaada uunivuokaan. Kaada sekaan munamaito ja raasta päälle juustoraastetta. Paista 200c uunissa n. 30-40 minuuttia.


If you would have asked every Finnish schoolgirl- or a boy back in the 80's and 90's what their favourite food was, I bet you would have got this casserole as the answer. I think nowadays because of the fast foods and variety available foods has grown so much the number one spot has been overtaken, but as simple as it is, this dish is still one of Finland's favourites and proper comfort food for us. The dish won't be complete without a massive splash of ketchup on top when you're eating it. Yes, you heard right: ketchup. I realised that I actually haven't made the casserole even once after moving to UK, so yesterday I decided that it was definitely the time, and made one for lunch. I hope it won't take another six years to make the next one, it was so good that I could have eaten the whole thing myself....

Macaroni and mince

200g macaroni
1 onion
300g beef mince
salt
black- and white pepper

about 5dl milk
3 eggs

grated cheese

Boil the macaronis but leave them properly "al dente". Chop the onion and fry in a pan until soften. Add the mince and brown. Season with salt and peppers. Mix the mince and macaroni together and place in the oven dish. In a bowl, whisk the milk and the eggs together. Season this also with a little bit of salt and peppers. Pour the milk and egg mix to the macaroni until it is all covered up. Top the whole thing with grated cheese and place in the 200c oven for about 30-40 minutes. Serve with ketchup.

Gooseberry Mess



Eräs yksinkertaisimmista ja herkullisimmista jälkiruoista täytyy olla Eton Mess. Googlettamalla selvisi että nimi jälkkärille tulee siitä että sitä alunperin oli tarjoiltu aina Eton Collegen:n krikettipeleissä. Yleensä Eton Mess tehdään mansikoista, mutta meidän pakastimesta löytyi iso kasa herkullisen näköisiä karviaisia joten päätin tällä kertaa käyttää niitä. Raikas marja-kompotti, löysä kermavaahto ja rapeat marengit: NAM!

Karviais-kompotti:

3 dl karviaisia
3 rkl sokeria
tilkka vettä

Lisäksi:

250 ml kuohukermaa
kourallinen marenkeja

Pistä kompotti-ainekset kattilaan ja keitä kokoon n. 10 minuuttia. Marjat tai hedelmät voidaan periaatteessa vaan muussatakkin, ei tarvitse välttämättä keittää. Mutta karviaisten kanssa kovahkot kuoret pehmenivät mukavasti keitettäessä. Muista jäähdyttää kompotti ennen tarjoilua.
Vispaa kerma löysähköksi vaahdoksi. Murustele joukkoon marengit, murut on mukava jättää hieman isohkoiksi. Sekoita varovasti joukkoon kompotti ja tarjoile heti. Lisää tarjottaessa vielä pieni lusikallinen kompottia/marjoja jälkkärin päälle.

One of the easiest and most delicious dessert has to be Eton Mess. I googled the origin of the dish and apparently it was originally served in the cricket games of Eton College and Winchester College. Usually you use strawberries for this recipe, but we had some great looking gooseberries in our freezer so I decided to try them instead. Refreshing fruit compote, fluffy whipped cream and crunchy meringues: yummy!

Gooseberry compote:

3 dl gooseberries
3 tbsp caster sugar
drop of water

Addition:

250 ml double cream
handful of meringues

Add the compote ingredients in to the pan and boil gently for 10 minutes or so. Let it cool. You can just mash the fruits or berries fresh, but I found that the skins of the gooseberries became nice and soft after boiling them a bit.
Whip the cream and crumble the meringues in. It's nice to leave some of them in quite a big pieces. Fold in the compote and serve immediately. Add a tablespoon of compote on top of the dessert when serving.

Lunching



Sarjassamme hyvää ja helppoa nopeasti. Edellisen päivän kokonaisesta broilerista oli vielä jotain jäljellä joten napsin kanasta lihat talteen, ja kiehautin pikaisesti 3 minuutin riisinuudelit. Huuhtelin nuudelit kylmällä vedellä ja valutin, lisäsin niiden sekaan kanat, leikkasin reippaasti mukaan punaista ja vihreää chiliä ja tuoretta korianteria. Kevätsipulikin olisi ollut kiva, mutta sitä ei tällä kertaa kaapista löytynyt. Kastikkeeksi lurautin sekaan vain hieman Thai-kalakastiketta ja puolikkaan limen mehun ja se oli siinä. Tämä toimisi tosi hyvin myös vaikka naudanpaistin jämien kera!

This belongs again to the category: "something easy and nice but quickly". We had some leftover chicken from the previous night's roast so I picked up the meat and boiled quickly some rice noodles. I washed the noodles in cold water, drained and added the chicken in. Lots of chopped red and green chilli went in as well as some fresh coriander too. Spring onions would have been perfect but this time we didn't have any. As a dressing I just poured in a bit of Thai fish sauce and juice of half a lime. This would be really nice with some leftover beef as well!

Vodka Gimlet


Luulin etten pitäisi tästä coktailista yhtään, koska se sisältää inhokki-ainestani: Lime Cordial:ia. Olisikohan tuo nyt sitten suomennettuna jonkinlainen limetin makuinen mehutiiviste, ja minusta se on vaan niin yltiömäisen makeaa ja keinotekoisen makuista että huh-huh... Lime Cordial on kuulemma noussut jopa kuningattaren suosikki-juomaksi, joten olisikohan aika antaa sille pieni mahdollisuus? Ja hyvä että annoin, koska tässä drinkissä se toimii ihan erinomaisesti. Tämä juoma on raikas, super-nopea ja siltikin kivan hienostunut. Sopisi vaikka tyttöjen iltaan tosi hyvin!

Vodka Gimlet (2 kpl)

1 rkl limetin mehua
2 limetinkuori-suikaletta
50ml vodkaa
50ml Lime Cordial:ia (tai muuta sitruunaista mehutiivistettä)

Sekoita kaikki ainekset isossa lasissa jäiden kera, ja valuta juoma sitten martini- tai muunlaiseen cocktail-lasiin.


I thought that I would definitely not like this cocktail at all. In the end, it was made from one of my least favourite ingredients: Lime Cordial. I just find it way too sweet and artificial tasting, but if even the Queen loves it, I deciced to give it a try. And I'm happy that I did, it works so well in this drink! T made us the cocktails and this Vodka Gimlet is fresh, super quick and still a bit sophisticated. Perfect for example for a girls' night out!

Vodka Gimlet

1 tbsp fresh lime juice
2 long strips of lime zest
50ml vodka
50ml Lime Cordial

Mix all the ingredients in a glass with plenty of ice. Strain the drink into a martini or other kind of cocktail glass.

Yllätyspullat



Ajattelin eräänä päivänä yllättää T:n kotiintullessaan tuoreella pullalla. Tiedetään, tiedetään, joka ikinen kerta kun olen pullaa leiponut niin aina sieltä jotain kivikovaa likilaskuista känttyä on syntynyt. Mutta siltikin sisäinen pieni masokistini tai se ainainen toiveikas optimisti nostaa välillä päätänsä, ja kuiskaa että eiköhän sitä taas yritettäisi? Ja kun näin Voisilmäpeliä-blogin Eevan omena-pekaani-pullat, niin kyllähän sitä piti ryhtyä tuumasta toimeen. Ja arvatkaa mitä! Niistä tuli ihan hyviä! Tai jos totta puhutaan niin niistähän tuli ihan erinomaisia!! Selätin jopa sen pirunmoisen kuivahiivan mitä inhoan yli kaiken. Jopa se toimi tällä kertaa ihan hyvin, jipii!

One day I decided to surprise T with some home baking. Yes I know, every time I've tried to make any kind of buns in the past they have always ended up rock-hard, not-risen and tasteless. Still that inner little masochist or the optimist inside of me is once in a while whispering to my ear to give another go, and when recently I saw this wonderful recipe for apple and pecan buns, I was sold again. And you know what? They ended up being quite good. No, actually they were pretty damn delicious! Even the dried yeast which I normally despise, worked perfectly and made the dough rise. Maybe there is still some hope with me and baking?



Buns:

2,5 dl milk
10g dried yeast
3 tbsp sugar
1 tsp ground cardamom
about 7 dl flour
1 egg
3 tbsp melted butter

Filling:

100g butter
1 dl brown sugar
1 dl caster sugar
2 tsp ground cinnamon
pinch of ground nutmeg
1 apple
1 dl pecans/walnuts

Glazing:

1 dl icing sugar
1 tsp apple cider/juice

Heat the milk a bit but don't make it too hot. Add sugar and dried yeast which you have mixed with couple of tablespoons of flour. Add the cardamom and the egg and then gradually start adding the flours. As soon as the dough starts looking like it's ready for kneading, add the butter and knead the dough for 5 minutes or so on a surface that you've dusted with flour. If you need to add more flour to make the dough not to stick to the surface, do so, but don't add too much.

Put the dough back to the bowl and place it somewhere warm and leave for 40 minutes or so until it is double it's size.

While the dough is rising, prepare the filling. Cut the apple into small cubes and chop the pecans or walnuts smaller. Melt the butter, add the sugars, spices and apples and the nuts.

When the dough has risen, place it back to the surface and roll it into a square. Pour the filling on top of the dough and spread it evenly. Roll the dough into a sausage and then cut into 12 pieces. Place the pieces into individual muffin cups or like me, into a muffin tray. Leave the buns to rest for another 10 minutes and then bake in the 175 degrees about 15-20 minutes. When the buns have cooled down, pour the glaze on top.

Lohta paketissa


Hirvee nälkä ja jotain on saatava äkkiä! Meidän perheen arkiruokaa on usein super-nopea uunilohi mikä päätyy jääkaapista lautaselle puolessa tunnissa. Tällä kertaa lohi-fileiden kanssa folioon päätyi loraus soijakastiketta, seesami-öljyä ja limetin mehua, yksi hakattu vihreä chili ja valkosipulin kynsi. Olisin laittanut korianteriakin mutta unohtui. Lohen sekaanhan voi heitellä mitä vain, sitruunaa ja timjamia, voita ja tuoretta rakuunaakin. Folio vaan kalan ympärille ja 180 asteiseen uuniin n. 15-20 minuutiksi. Meillä syötiin tämä tänään höyrytetyn parsakaalin ja kevätkurpitsan kanssa jonka joukkoon olin lurauttanut hieman osterikastiketta ja seesami-öljyä.


You know the feeling when you're absolutely starving and need something to eat right now? This super easy salmon dish ends up as our dinner quite often. Mostly because not only it is delicious but it also takes about half an hour from the fridge on the plate! This time I poured some soy sauce, sesame oil and lime juice in the foil with the fish, chopped one green chilli to go along as well as one clove of garlic. I was supposed to add some fresh coriander too, but I forgot. You can bake the salmon with anything; lemon and thyme, butter and fresh tarragon etc. Wrap the foil around the fish and put it in 180 degrees for 15-20 minutes. We had the salmon today with steamed broccoli and courgette which I had tossed around together with some oyster sauce and sesame oil.

Momot



Hyvä ystäväni on Nepalista kotoisin ja ihan erinomainen kokki. Vuosien aikana ystäväni on tutustuttanut meidät Nepalilaiseen ruokaan joka on ihan älyttömän herkullista, ja ehdottomaksi suosikiksi ovat meidän porukassa nousseet Momot. Nämä pienet lihanyytit ovat hyvin samantapaisia kuin kiinalaiset Gyozat, mutta valmistustapa on hieman erinlainen kuten myös nyyttien täyte. Taikina itsessään on tehty pelkästään vedestä ja jauhoista, ja possun jauhelihan lisäksi täytteessä on yleensä runsaasti tuoretta inkiväärtä, kevätsipulia ja nokare voita. Yleensä Momot nautitaan kylmän chili-kastikkeen kera, minkä ystäväni hurauttaa tehosekoittimessa tomaateista, chileistä ja mausteista joiden yksityiskohtia en ole vielä saanut urkittua. Momoihin iskee hillitön himo, ja niitä täytyy saada aina "yksi vielä" vaikka vatsa pullistelisi ja järki kertoisi jo lopettaa. Muistan miten kerran huomasimme työpaikan lähistöllä olevan Nepalilaisen ravintolan ja tilasimme lounaaksi 10 annosta Momoja. Kun kipittelin hakemaan tilausta näin miten kokki vieläkin pyöritteli nyyttejä valmiiksi keittiössä hiki hatussa. Oli ilmeisesti tullut hieman yllätyksenä tämä 100kpl Momon tilaus!

Eilen kävin tapaamassa ystävääni taas pitkästä aikaa, ja hän oli valmistanut meille ihan erinomaista karitsa-curryä lounaaksi minkä nautimme dahl:in, eli linssikeiton/muhennoksen kera. Hän myöskin tarjoili seurana aivan mahtavaa possu-pikkelsiä, mikä oli paistettua possunlihaa säilöttynä mausteisiin ja öljyyn. Ystäväni äiti oli valmistanut tämän käydessään Lontoossa ja pikkelsi kuulemma säilyy kuukausia jääkaapissa. Tähän haluan ehdottomasti reseptin. Aika erikoista, mutta oi niin hyvää! Juuri ennen kotiinlähtöä ystäväni hoksasi että eihän kotiin voi lähteä ennenkuin ollaan syöty parit Momot. Hän höyrytti pikaisesti keittimessään nämä herkulliset pikku-nyytit ja vaikka perinteistä chili-kastiketta ei tällä kertaa ollutkaan niin kyllähän taas oli hyvää!


Good friend of mine is from Nepal and a fantastic cook. During the last couple of years she has introduced us to Nepalese cuisine and we absolutely love it. One of our favourites are Momos, those delicious, juicy meat dumplings. They are very similar to chinese Gyozas but the cooking method is a bit different as well as the filling inside. The dough is done just with water and flour and in the filling is at least pork mince, ginger, spring onion and little bit of butter if I remember correctly. Momos are eaten with a cold chilli sauce, or a pickle as my friend says, which she blends in a blender from tomatoes, chillies and and some spices. Momos are very addictive, and you always have to have "just one more" even though you are so full that you can barely move yourself from the table. Once we had a Nepalese restaurant near by our office, and one day we ordered 10 portions of Momos for lunch. I remember going to pick them up and seeing the chef very stressed still rolling the dumplings in the kitchen, I think our order of 100 Momos had been a bit of a surprise for him...

I met up with my friend again yesterday, and she had prepared a lovely mutton curry for lunch. We had the curry with dahl, and this amazing pork chutney that her mum had made. It's basically fried pork which is preserved into spices and oil. Fantastic! I really need to get a recipe for it! Just before I was leaving, my friend realised that of course I can't go before having some Momos and she quickly prepared some and steamed them in her specific steamer. Even though we didn't have that particular chilli sauce this time, the Momos were absolutely lovely as usual!

Scotch eggs



Rrrrrrrrakastan Scotch eggs:ejä! Tämä oudohko enkku-ruoka on kyllä yksi suosikeistani snack-puolella, ja ihan ehdoton esim. piknikeillä. Pyhässä yksinkertaisuudessaan keitetty kananmuna on kääräisty tuoremakkara-massan sisään, pyöritelty korppujauhoissa ja paistettu. Supermarkettien versiot ovat ihan ok, mutta aina hieman mietityttää se ulkokuori koska ei meillä ainakaan ikinä ole korppujauhot olleet väriltään kirkkaan oransseja... Ajatus kotona tehdyistä skotti-munista on hautunut pitkään, ja olen niitä muissakin blogeissa nähnyt tehtävän. Sovelsin Delian ohjetta hieman ja käytin mitä jääkaapista löytyi, ja lopputulos oli tosi hyvä. Pieni muutos ensi kerraksi voi olla että ehkä laitan vain yhden kevätsipulin kahden sijaan. Ja jos tuoremakkaraa ei ole saatavilla, mietin josko jonkinlainen mureketaikina voisi toimia korvikkeena. Pelkkä jauheliha ei varmaankaan käy, sehän taitaisi murentua kokonaan paistettaessa.

Scotch Eggs

4 isoa kananmunaa
225 g tuoremakkaraa
2 kevätsipulia
kourallinen lehtipersiljaa
pieni punainen chili
ripaus chilijauhetta
1 rkl oreganoa
suolaa
pippuria

Leivitykseen:

1 kananmuna
vehnäjauhoja
suolaa
pippuria
korppujauhoja/pankoa

ruokaöljyä paistamiseen

Pistä kananmunat kylmään veteen liedelle ja laske 9 minuuttia siitä kun vesi alkaa kiehumaan. Huuhtele munat kylmällä vedellä, kuori ja pyöräytä pikaisesti vehnäjauhoissa. Sekoita tuoremakkara-massan joukkoon pieneksi silputtu kevätsipuli, chili, persilja ja mausteet. Muotoile massasta jauhoitetulla alustalla neljä pientä levyä, pistä kananmuna levyn keskelle ja muotoile massa munan ympärille. Pyöräytä munat vielä pikaisesti jauhoissa, sitten rikotussa kananmunassa ja lopuksi korppujauhoissa/pankossa. Uppopaista ruokaöljyssä n. 6 minuuttia ja muista olla varovainen kuuman öljyn kanssa. Nosta paistetut pyörykät talouspaperin päälle kuivumaan.

I looooooooooooove Scotch Eggs! This funny little boiled egg wrapped in sausage meat is my favourite and perfect for example on picnics. The supermarket versions are ok, but the bright orange colour in the coating is always a bit off-putting... I have had an idea of making my own Scotch eggs for a while, and I finally made an effort to do it. They were delicious! I altered Delia's recipe a little bit by using just fresh parsley, dried oregano and one chopped little chilli in the mix and the result was great. Perhaps just next time I would add only one spring onion instead of two. I was thinking that perhaps you could use some kind of meatloaf/ball mix if don't have any sausage meat handy. However, the best result comes with really good sausages.

Sardinia



Yritämme käydä kerran vuodessa vähän pidemmällä lomalla lataamassa akkuja ja nauttimassa lämmöstä. Tällä kertaa reissu suuntautui Sardiniaan, koska olimme kuulleet juttuja paikan hienoista rannoista ja taisi asiaan vaikuttaa hyvän paikallisen ystäväni suosituksetkin. Reissu oli ihana, ja saarta tuli koluttua mukavasti. Aloitimme matkan etelästä josta suuntasimme itä-rannikolle ja lopuksi länsi-rannikon autioille rannoille. Minun suosikkini oli ehdottomasti länsi, koska tuntui että isoin osa turisteista ei sinne olleet vielä ehtineet ja rannat sekä kylät olivat tosi kauniita. Ylipäätään kyllä suosittelen Sardiniaa ja jos vaan mahdollista niin ajelemaan ympäri saarta, koska maisemat ovat huikeita! Historiallisia paikkoja löytyy myös yllin kyllin ja saari on melko mielenkiintoinen satoine nuragheineen ja tippukiviluolineen.


Ruoan puolesta matka oli myös hyvin onnistunut. Saarella kun ollaan, meren antimet olivat mitä mainioimmat. Söin reissulla ehkä maailman parhainta grillattua meriahventa, ja lempiruoakseni nousi paikallinen Fregola mitä yritän tehdä tässä joku päivä nyt itsekkin. Tietenkin pizzat ja pastat olivat arkipäivää, ja mitä yksinkertaisempaa, sitä parempaa. Meillä oli mahdollisuus myös kokkailla itsekkin, ja eräs ilta saimme loihdittua täydellisen loma-illallisen terassille. Suolattua ja grillattua meriruutanaa, Sardinialaista tuoremakkaraa, paahdetuita paprikoita, tomaatti-basilika-salaattia ja spagettia kuivatun mädin, botargan kanssa. Pullo paikallista punaviiniä ja oi miten lomalla onkaan mukavaa!


Once a year we try to take a bit longer holiday and go and charge the batteries and enjoy the sun. This time the location was Sardinia. We had heard so much about the amazing beaches and my local friend's recommendations didn't do any harm helping us with the decision. We had such good time, and luckily were able to see quite a bit of the island. We started from the south where we stayed about a week, headed to the east coast and ended up in west. I have to say that my favourite had to be the west coast, because it was still quite free from the tourists and the beaches were absolutely amazing. I would definitely recommend Sardinia as a holiday destination and if possible, get a car to go around the island because the scenery is fantastic! There are also plenty of historic stuff over there and the place is pretty interesting with hundreds of nuraghes and exciting caves.


Food wise the trip was also a success. Obviously as being on an island, the seafood was fantastic. I think I had the best barbecued sea bass in the history, and my favourite became the local Fregola which I'm planning to try to make myself soon as well. Of course pizzas and pastas were part of everyday life, and the more simple, the better. We also had an opportunity to cook ourselves, and one night we made the perfect holiday dinner ever. Salted and barbecued sea bream, local Sardinian sausage, roasted peppers, tomato and basil salad, and spaghetti with dried roe, botarga. Bottle of local red wine, and oh, how great it is to be on holiday!

Surviver



Voihan kökkö. Olin elätellyt toivoa että kattopuutarhan omenpuusta irtoaisi omput ainakin pienen pieneen omenapiirakkaan näin syksyllä, mutta kuinkas sitten kävikään! Kahden viikon loman jälkeen kotiin tultaessa puussa odotti enää tämä yksi omenainen. Tai no olivat muutkin vielä paikallaan, mutta jotenkin ihan... mätiä. Outoa koska lomalle lähdettäessä omput olivat vielä ihan hyvällä mallilla. No ehkä ensi vuonna paremmalla onnella, ja olin ihan onnellinen tästä yhdestä yksilöstäkin.

Oh dear. I was hoping to make at least one apple pie from the apples on our roof terrace, but it didn't really work out that way. After coming back from two week holiday, there was only this one little apple waiting for me. All the rest of them were for some reason kind of...rotten. Which is a bit funny because they seemed fine before we left. Oh well, better luck next year and this little surviver was actually really delicious one!

Greta's Toast eli fiinimpi pyttipannu


Asustelin jossain vaiheessa opiskelu-aikoinani vuoden pohjoisessa lähellä Ruotsin rajaa ja vaikka muuten vuosi oli aikamoista tuskaa, rakastin sitä että pikkupikku yksiössäni näkyi miltei kaikki Ruotsin tv-kanavat. Siihen aikaan katselin paljon Tina Nordstömin kokkailuja ja tykästyin hänen tyyliinsä keittiössä. Tämä vähän fiinimmän pyttipannun resepti on alunperin hänen käsialaansa, ja kyllä toimii.

Greta's Toast

300-400g mureaa naudan lihaa
500g perunoita
1 salottisipuli
2 rkl Dijon-sinappia
1/2 sitruunan mehu
1 kananmuna
kourallinen lehtipersiljaa
suolaa
pippuria

paahtoleipää

Kuutioi lihat ja perunat n. 1x1cm kokoisiksi kuutioiksi ja silppua salottisipuli mahdollisimman pieneksi. Paista lihakuutiot kuumalla pannulla ruskeiksi ja siirrä sivuun. Paista perunat samassa pannussa parissa erässä kunnes ne ovat ottaneet väriä ja rapeita. Lisää lihat takaisin pannuun ja paista pari minuuttia. Siirrä koko satsi kulhoon. Kaada joukkoon salottisipuli, persilja, sinappi, suola, pippuri ja sitruunamehu. Riko joukkoon lopuksi kananmuna ja sekoita kunnes kaikki ainekset ovat sekoittuneet keskenään. Paahda leipä rapeaksi ja tarjoa peruna-liha-seos leivän päällä.


There's this lovely Swedish chef who I really like. Her name is Tina Nordström and she has done several tv-programs and cookbooks and I love her quirky style and fantastic way of cooking. This recipe is from her long time ago and is really proper comfort food. It's nice and crispy little potatoes with tender meat and all mixed into this delicious gooey mix with some egg and mustard and served on toast. Yummy!

300-400g rump or rib eye steak
500g potatoes
1 shallot
2 tbsp Dijon-mustard
juice of 1/2 lemon
1 egg
handful of flat leaf parsley
salt
pepper

toast

Cube the meat and potatoes to 1xcm cubes and chop the shallot as small as you can. Fry the meat in a hot pan until brown and put aside. Fry the potatoes in the same pan in patches until they are golden brown and crispy. Put the meat back to the pan and fry for couple of more minutes. Remove the whole thing to a bowl and add mustard, lemon juice, shallots, parsley and black pepper and salt into the mix. Last, break an egg to the mix and mix until everything is covered with it. Enjoy the meat and potato-mix with toast.

Ceviche


T oli (aivan liian) pitkällä työmatkalla viime viikot, ja paluun kunniaksi halusin kokkailla jotain kivaa. Samalla pidimme myös meidän loman aloittajaiset, joten oli enemmänkin syytä juhlaan. Tein alkuruoaksi cevicheä mikä on siis limetin mehussa kypsytettyä raakaa kalaa.

Periaatteessa mikä tahansa vaalea kala käy tarkoitukseen hyvin, mutta kalan täytyy olla tosi tuoretta koska se pelkästään raakakypsytetään limetin mehulla. Minä käytin tällä kertaa turskaa ja paloittelin fileen kivoiksi suupaloiksi. Puristin päälle kahdesta limetistä mehut, siivutin kokonaisen punaisen chilin joukkoon ja heitin mukaan vielä ohuenohueksi siivutetun puolikkaan punasipulin. Ripaus suolaa ja pieni kourallinen korianteria ja jääkaappiin muhimaan pariksi tunniksi.

Söimme cevichen tortillasipsien, muussatun avocadon ja kylmän oluen kera. Loma alkakoon!


T has been (way too long) for a business trip during the last couple of weeks, and as he returned I wanted to cook something nice. It was also the start of our holiday so it was definitely time for some celebrations. I decided to start the evening with ceviche, lime-marinated raw fish.

Basically any kind of white fish is good for this, but the main thing is that the fish has to be super fresh. The fish stays raw and the lime juice will cook it. I used cod this time and chopped it into bite-size pieces. I topped the fish with the juices from two limes, chopped one whole red chilli to go with and sliced a red onion very thinly and added in. Sprinkle of salt and some chopped coriander went in and I placed the whole thing into the fridge for couple of hours.

We had the ceviche with tortilla chips, avocado and cold beer. Let the holiday begin!

Poncho



Syksyiset sateet ovat tuoneet mukanaan taas innon käsitöihin. Kynttilät, viltti, lasi punaviiniä ja kiva kudelma kädessä, ihanaa! Nyt kun aikaakin on ollut vähän enemmän, sain aikaseksi tekaistua viime viikolla Kalastajan Vaimon ohjeella kivan ponchon.

With the autumn rains, my interest for knitting has returned. Candles, blanket, a glass of red wine and a nice knitting project, perfect! Now when I have had a bit more time, I was able to make this great poncho last week. Instructions came from here.

Vietnamilaista kanaa pavuilla


Vietnamilainen keittiö on ehdottomasti yksi suosikeistani. Voisin syödä loputtomiin Pho-nuudelikeittoja tai napostella kesäkääryleitä päivittäin. Vietnamilainen ruoka on erittäin aromaattista, ja esimerkiksi Thai-ruokaan verrattaessa minun mielestä paljon raikkaampaa. Mausteina käytetään sitruunaruohoa, limettiä, minttua ja korianteria. Mitä näistä voisi vastustaa!

Tässä nopeassa wokissa maistuu ihanasti karamelisoitunut sipuli, raikas sitruunaruoho ja minttu ja etikka tuo mukaan tosi kivan potkun. Helppoa kuin heinänteko!

4 luutonta kananrintaa/reittä
2 sipulia
5 valkosipulinkynttä
2 sitruunaruohoa
3 punaista chiliä
250g vihreitä papuja
2 rkl sokeria
2 rkl Thai-kalakastiketta
2 rkl riisiviina-etikkaa
pieni kourallinen minttua

Kuumenna wokki kuumaksi. Paista pilkotut kanat pikaisesti wokissa ja siirrä sivuun. Leikkaa sipulit ohuiksi renkaiksi ja paista ne, pilkotut chilit ja valkosipulit ja ohueksi silputtu sitruunaruoho pannulla kunnes sipulit ovat pehmenneet ja ottaneet väriä. Lisää vihreät pavut ja sokeri ja paistele kunnes pavut ovat kypsyneet. Lisää kanat takaisin wokkiin ja mausta kalakastikkeella ja etikalla. Lisää minttu juuri ennen tarjoilua ja nauti riisin tai nuudeleiden kera.


Vietnamese cuisine is definitely one of my favourites. I could live only by eating Pho-noodle soups or munching away lovely and fresh summer rolls. Vietnamese food is extremely fragrant and in my opinion compared for example to Thai-kitchen, more fresh and aromatic. They use a lot of lemon grass, lime, mint and coriander. Which one of there can you resist!

In this super quick stir fry you can taste lovely sweet caramelised onions, fresh lemon grass and mint, and the vinegar gives it a good kick in the end. Easy peasy lemon squeezy!

4 boneless chicken thighs
2 onions
5 cloves of garlic
2 stems lemon grass
3 red chillies
250g green beans
2 tbsp sugar
2 tbsp fish sauce
2 tbsp rice wine vinegar
small handful of mint

Cut the chicken into bite-size pieces and fry quickly in the wok. Take the chickens out and add the finely sliced onions, chopped chilies and garlics and very finely sliced lemon grass. Fry until the onions have soften and taken some colour. Add then the beans and sugar and fry until the beans have cooked through. Add the chicken and pour in the fish sauce and the vinegar and just before serving sprinkle the mint in. Serve with rice or noodles.

Karelian Pies



Nyt kesällä Suomessa ollessamme, T ihastui karjalanpiirakoihin. Mielestäni olen niitä kyllä syöttänyt aikaisemminkin, mutta mitään muistikuvaa ei kuulemma tästä kuitenkaan ollut. Kotiin tultuamme mietin josko uskaltaisin koettaa kyseisten piirasten tekoa ihan itse täällä länsi-Lontoon pikku-keittiössä. Sain kun sainkin äidiltä reseptin (minkä sitten kylläkin hukkasin ja käytin lopulta HS:n sivuilta löytynyttä ohjetta...) ja lähdin metsästämään ruisjauhoja. Ja yllättävän helposti niitä sitten löytyikin!

Vaikka itse sanon niin kyllä näistä tuli tosi hyviä. Rypytys nyt meni vähän niin ja näin, mutta ihan ok minun mielestä ensikertalaiselle. Ja ehkä ensi kerralla laitan mukaan hieman vehnäjauhoja ruisjauhojen sekaan jotta taikinasta ei tule niin... ruista? Dippasin piirakat vielä paiston jälkeen maito-voi-seoksessa ja pyöräytin seuraksi perinteisen munavoin. Harmi vain että T on tämän viikon työmatkalla, ja "jouduin" nauttimaan piirakoista ihan itsekseni. Jospa niitä pari jää vielä pakkaseen niin saa matkalainen sitten maistella josko ne maistuvat yhtä hyviltä kuin lomalla.

Back in the days an area called Karelia was part of Finland. This is located in the South-East from Finland, between Finland and Russia. When Finland lost the war against Russia at WW2, part of the war payments included Karelia to be given to Russia. Most of the people had to move to Finland then and sadly they were only allowed to go back and see their homes after the Soviet Union collapsed. Obviously many of them never saw that day, and this matter has always been very talked in Finland. Around 1970's and 80's there were political campaigns to try to get the area back to Finland.

My grandmother's family was from that area. The things that reminded me of that with her was the way that she talked, specific dialect, as well as the most delicious Karelian Casserole that she cooked for us. There are also little pies called Karelian Pies which are from there. When we were visiting Finland this summer, T fell in love with them. I'm sure I've given him some before, but apparently this is not the case. These pies are made of rye flour, filled with salty rice pudding and served with eggy butter. Sounds a bit bonkers, but I guarantee, they are lovely.

Karelian Pies

Pastry:

2,5 dl water
5-6 dl rye flour
1/2 tsp salt

Filling:

2,5 dl water
20g butter
2 dl short grain rice
7 dl milk
1/2 tsp salt

Dipping sauce:

2dl milk
20g butter

Boil the water, butter and the rice together for 10 minutes or so. Add the milk and salt and let it simmer until rice is cooked, and you have a nice consistency of rice pudding. Let it cool. Mix together the pastry ingredients and mix until you have a firm ball which is not sticking to the bowl. Create a long sausage from the dough and cut it into 50 little pieces or so.

Cover the pieces with a cloth so they won't dry out. Roll the pieces into round shapes with a rolling pin, put a spoonful of rice pudding in the middle and then pinch the sides together.



Bake in the oven with the hottest temperature about 15-20 minutes. For the dipping sauce warm the milk and butter and as soon as the pies come out from the oven, dip them quickly to the dipping sauce and leave to cool.
The pies are always eaten with an eggy butter which you make by chopping couple of hard boiled eggs and mixing them to a soften butter. Spread this on the pies. Delicious!
