Hottiakin hotimpaa - kylmää Gazpachoa siis!


Wow, Lontoon kesä on vihdoin saapunut. Se kyläili pikaisesti vähän aikaa sitten, mutta nyt se oikein asuttui tänne ja toivottavasti jää pidemmäksikin aikaa. Vaikka sisälläkin hiki valuu ja vaatteita pitää vaihtaa alati, en silti valita. On tämä sen verran harvinaista herkkua.

Tämmöisillä helteillä ei tosiaan paljon uunia tai liesiä jaksa hehkuttaa, ja eiliselle illalliselle kylmä Gazpacho kuulosti ihan täydelliseltä vaihtoehdolta. Nopeaa, vilvoittavaa ja herkullista. Jes! Eli kaikki ainekset vaan tehosekoittimeen, sekaisin, siivilän läpi keitto tasaiseksi, ja sitten vaan jääkaappiin kylmettymään. Paistoin hieman pekonia ja hakkasin keitettyä kananmunaa vielä keiton päälle, ja tiputin myöskin pari jääpalaa keittoon juuri ennen tarjoilua.

Gazpacho

750g tosi kypsiä tomaatteja
1 punainen paprika
puolikas vihreä paprika
1 kurkku kuorittuna
2 valkosipulinkynttä
1,5 dl Extra Virgin oliiviöljyä
n. 50 g vanhahkoa leipää
2rkl sherryviini-etikkaa
suolaa
pippuria

pekonia, kananmunaa (mustia oliiveja, krutonkeja, basilikaa tms.)

Revi leipä palasiksi, kaada päälle hieman vettä ja jätä pehmenemään. Laita kaikki muut ainekset paitsi etikka ja mausteet tehosekoittimeen ja aja tasaiseksi. Purista leivistä liiat nesteet pois ja laita muiden ainesten kanssa tehosekoittimeen. Aja taas tasaiseksi. Lisää etikka ja mausteet, ja kaada seos siivilän läpi kulhoon. Laita keitto jääkaappiin tekeytymään ainakin puoleksi tunniksi.

With this kind of weather you definitely don't feel like blasting your oven or stoves. Nice, cooling Gazpacho sounded like a perfect option for yesterday's dinner. Quick, easy and delicious! Add all the ingredients to the blender, whizz them through and then just pass through the sieve before placing it to cool in the fridge. I also fried just a little bit of bacon and chopped up some boiled egg to go on top and also dropped couple of ice cubes to the soup just before serving. 

Gazpacho

750g ripe tomatoes
1 red pepper
half a green pepper
1 peeled cucumber
2 cloves of garlic
150ml Extra Virgin Olive Oil
about 50g stale bread
2 tbsp Sherry vinegar
salt
pepper

bacon, boiled egg (black olives, croutons, fresh basil etc.)

Tear the bread and put it in a bowl with a little bit of water to get moist. Chop all the other ingredients except the vinegar and salt and pepper and place in a blender. Whizz everything through until smooth. Squeeze the extra water from the bread and add the bread to the soup mix. Whizz through again until smooth and add then the vinegar and salt and pepper. Pass the soup through a sieve and place the soup in the fridge to cool at least for half an hour.
