Ale Trail



Pari viikkoa sitten suuntasimme kaveri-porukalla Länsi-Yorkshireen, Marsdeniin. Pojat olivat kuuleet jostain alueella kulkevasta Ale Trail:ista ja halusivat päästä sitä testaamaan. Kyseinen alue on kuuluisa Ale-oluistaan ja Ale Trail:in ideana on kiertää pienet kylät jotka ovat lähellä toisiaan ja joihin pääsee 5 minuutin junamatkoilla ja käydä testaamassa jokaisessa kylässä paikalliset pubit sekä paikalliset oluet.


Me vuokrasimme 10-hengen (+pötkylä) kanssa ison maalaistalon viikonlopuksi ja se osoittautui oikein mukavaksi ja oli vielä niin hyvällä paikalla että Marsdenin kylään käveli kahdessa minuutissa ja juna-asemakin oli vain viiden minuutin päässä. Lauantain vietimme ihan talossa kokkaillen ja lautapelejä pelaillen, mutta Sunnuntaina sitten suuntasimme pubilounaalle ja pojat aloittivat siitä sitten kiertely-päivänsä.

Itsehän en oikein oluita päässyt kovin maistelemaan koska pötkylä käy vielä rintamaidolla, mutta yleensä Ale-oluet ovat aika mielenkiintoisia ja niihin kyllä pitäisi perehtyä paremmin. Tykkään varsinkin miedommista Aleista ja on vaihteeksi kiva kun tuopin jälkeen olo ei ole niin turvonnut mitä normaalit lagerit saattavat aiheuttaa. Joskus kuitenkin Alet saattavat tuntua liiankin kitkeriltä, mutta ehkä niiden on tarkoituskin?

Päivän päätteeksi taloon palasi viisi hilpeää miestä, jotka olivat nauttineet Ale Trail:ista tosi paljon. Kohokohtia olivat olleet kuulemma pubi joka sijaitsi junalaiturilla sekä pubi joka teki omat oluensa pubin kellarissa.

Lisää infoa Ale Trail:ista täältä, ja jos oluen maistelu ei kiinnosta niinkään paljon, alue on myös ihan älyttömän kaunista ja tarjoaa paljon kivoja kävelyreittejä luonnossa. Myöskin lukuisista pubeista ja kahviloista löytyy tosi hyvää ruokaa ja herkkuja. Löytyi myöskin leipomo/kahvila, joka tarjosi Pullaa (siis ihan suomeksi pullaa), ja köyhiä ritareita!


Few weeks ago we spent a weekend in West Yorkshire, particularly in Marsden. Boys had found out about a thing called Ale Trail and wanted to go and try it out. Villages around Marsden are known about their Ales and the idea of Ale Trail is to go around the area with train and try local pubs and beers. The stations are located around 5-10 minutes from each other. 

We rented a big country house with ten people (+ little dude) which turned out to be fantastic and just few minutes from the Marsden town centre and the train station. We spent Saturday just in the house and cooked lovely dinner and played some board games. However, on Sunday we headed to the local pub for lunch and the trail for the boys started from there.

I wasn't able to really experience the ales myself because the little dude is still powered by breast milk, but generally ales are quite interesting and at least T is quite keen to learn more about them. I tend to like the milder ales and really like the fact that you don't feel that bloated after a pint which you would do after drinking lager. However, sometimes I find the ales way too bitter but I guess that's how they should be?



In the end of the day we were greeted back in the house by 5 very jolly men. Apparently the highlights of the trail were the pub which was located actually on the train platform and another pub which brew it's own ales in the cellar underneath their premises. 

More information about the Ale Trail you can find from here, and if you're not keen on tasting beers, the area is also incredibly beautiful and has loads of country trails to explore. Also the food at the local pubs is great and you can also find lovely cafes and bakeries from the villages. We tested a bakery that served Finnish Pulla. How fantastically random!

Sourdough - projekti


Samaisesta Dan Lepardin "Short and Sweet"- kirjasta löytyi paljon juttua leivän leipomisesta ja mainittiin pikaisesti myös oi, tuo herkkujen herkku hapanleipä. Meillä on ystäväpariskunta joka leipoo ihan sairaan hyvää hapanleipää; viimeksi picnicillä oli tarjolla viikunaista ja pähkinäistä hapanleipää sinihomejuuston kera. Nam!

Hapanleipä on kutkuttanut jo vaikka kuinka kauan, mutta hyvän leivän leipomiseen tarvitaan hyvä juuri. Ja se ei olekaan mikään maailman yksinkertaisin juttu. Juuren aloittamiseen ihan alusta tarvitaan viikkoja ja jotenkin se on aina kuulostanut niin pelottavalta, että en ole edes uskaltanut yrittää. Ystäväni antoi pienen määrän omaa juurtansa vähän yli vuosi sitten ja sitä piti sitten ruokkia vedellä ja jauhoilla parin päivän välein jotta taikinajuuri tuplaantuisi ja päästäisiin sitten lopulta leipomaan. Monta viikkoa meni juurta ruokkiessa, mutta sitten yllättäen tapahtuikin niin että meitsillä alkoi maha kasvaa. Ja ruoka ällöttää. Joten voitte arvata kuinka paljon hiivalle tuoksuva taikina-velli innosti. Tuuppasin juuren jääkaapin perukoille ja sinne se sitten jäikin. Juuri selvisi jopa muutosta uuteen taloon, mutta kun jonkin aikaa sitten sitä katselin, päätös sen roskiin heittämisestä oli aika helppo.

Mutta nyt kuulkaas. Päätin että jospa koittaisin tätä hommaa ihan alusta asti. Ja ajattelin että kerron sen täällä näin ihan julkisesti, jotta jos sitten jossain välissä kyllästyn hommaan saatte ihan luvan kanssa haukkua vötkyläksi tai ihan miksi vaan koska kyllähän nyt yksi hapanleipä-juuri pitää saada elämänsä aikana ainakin kerran alulle.

Joten tästä se lähtee. Lepardin neuvojen mukaan sekoitin keskenään ruisjauhoja ja vettä pieneksi taikina-palloksi ja jätin sen kulhoon lepäilemään. Nähdään n. 5 päivän päästä!


From the same "Short and Sweet"- book by Dan Lepard I found loads of things about baking bread and he also mentioned my all time favourite, sourdough. We have friends, a couple, who make the most delicious sourdough from scratch. Last time on our picnic we were treated with a fig and nut sourdough, yum!

Sourdough has been in my mind, but for a good one you would need a good starter. And that's not the easiest thing to do. To make the starter, you need loads of time and the whole thing has always sounded quite daunting so I haven't had guts to even try. My friend gave me small amount of their starter more than a year ago and my job was to feed it so the amount would grow and I would be then ready to bake with it. I fed the starter for weeks, but then suddenly my belly started to grow. And food started to make me sick. So you can guess how appealing the yeast smelling blob in a jar looked. I pushed the starter to the back of the fridge and there it remained. Funnily enough the starter even made it through the move to the new house, but in the end I looked at it and it just looked way too sad to keep. I threw it away.

This is it though. I decided now to give it a proper go. I'm announcing it here publicly so if I fail or can't be bothered to complete the task, you are more than welcome to call me all sorts of names and make me feel like a proper looser. I give you that permission. One should be able to make a sourdough starter at least once in their life, right?

So here we go. With the guidance of Lepard I mixed together some rye flour and water and made a small dough ball. I leave it now to rest. See you in about 5 days!

Jugurtti-pannacotta ja omena-kompotti


Kivat ystävät tulivat Lauantai-lounaalle ja halusin tehdä jälkiruoaksi jotakin mihin ei menisi paljoa aikaa ja jonka voisin tehdä mieluiten etukäteen. No mikä onkaan helpompaa kuin pannacotta, ja kun kulhossa nökötti pieni pussi omenoita, tekaisin seuraksi super-helpon omena-kompotin. Käytin pannacotissa jugurttia, mikä antoi niille kivan hapahkon vivahduksen ja kompotissa kanelia mikä sopi oikein kylmän päivän jälkiruokaan. Jos kokeilette tätä pannacotta-reseptiä, niin tarkistakaa liivatelehtien määrä koska en ole oikein varma minkä kokoisia lehtiä Suomessa nykyään oikein käytetään. Täällä on noita 8x5cm levyjä, joten jos käytätte isompia niin tarkistakaa paketista miten ne oikein hyytyvät. Käytin myöskin aitoa vanilja-uutetta, koska kaupasta ei löytynyt vanilja-tankoja. Kompotti toimii myös tosi hyvin seuraavana päivänä puuron kanssa!

Jugurtti-pannacotta neljälle
185ml kermaa
50g sokeria
puolen vaniljatangon siemenet/loraus vanilja-uutetta
1 1/2 liivatelehteä
250g kreikkalaista jugurttia

Laita liivatelehdet likoamaan kylmään veteen. Kuumenna kerma ja sokeri kattilassa, anna kiehahtaa ja ota pois liedeltä. Lisää liivatelehdet ja vanilja ja sekoita kunnolla. Sekoita joukkoon jugurtti ja kaada tarjoiluastioihin. Jäähdytä pannacottia jääkaapissa ainakin 3 tuntia.

Omena-kompotti

5 omenaa
1 kanelitanko
1 rkl jauhettua kanelia
2 rkl (tummaa) sokeria
loraus vettä
loraus valkoviiniä
kourallinen boysenmarjoja

Kuori ja lohko omenat haluamasi kokoisiksi ja laita kattilaan. Heitä sekaan kanelit, sokeri, vesi ja valkoviini ja hauduttele hiljaksellen kunnes omenat alkavat hajota. Lisää kattilaan kokonaiset boysenmarjat ja ota kattila pois liedeltä jäähtymään. Tarjoile kompotti hieman jäähtyneenä.


Lovely friends of ours stopped by for Saturday lunch and I wanted to make a dessert that wouldn't take too much time and which I could hopefully make in advance. What would be easies dessert than pannacotta and as we had a little bag of apples on the table as well, I made a super easy apple compote to go with. I used yoghurt in the pannacotta, which made them slightly tangy and added cinnamon to the compote which seemed to work really well on a cold wintery day. Also the compote would be lovely the next day with porridge or yoghurt. 

Yoghurt- pannacotta for four

185ml double cream
50g sugar
seeds from half a vanilla pod/1 tsp vanilla extract
1 1/2 leaves of gelatine
250g Greek yoghurt

Put the gelatines in a bowl of cold water to soften. Heat the cream and sugar in a pan, bring to boil and take away from the pan. Whisk in the gelatine and the vanilla. Mix in the yoghurt and pour the mixture in the serving bowls. Let the pannacottas set in the fridge at least 3 hours.

Apple compote

5 apples
1 cinnamon stick
1 tbsp ground cinnamon
2 tbsp demerera sugar
glug of water
glug of white wine
handful of blackberries

Peel and cut the apples to a size you want and put them to a sauce pan. Add the cinnamons, sugar, water and wine and let the mixture bubble in a low heat until the apples start to break. Add the backberries and take the compote off the heat. Offer the compote slightly cooled.

Light lunch



Mietittiin että tehtäisiin jotakin kevyttä lounaaksi Perjantaina. Päädyttiin sitten niinkin kevyeen yhdistelmään kuin rasvassa tiristettyyn schnitzeliin ja majoneesipohjaiseen perunasalaattiin. No mutta hyvää kuitenkin oli. Tekaisin myös salaattiin majoneesin itse koska puolessa välissä kokkailuja huomasin että meiltä oli kaupan versiot loppu.

Perunasalaatti

n. 1 kg perunoita
4 pientä kevätsipulia
muutama suolakurkku
2 rkl kapriksia
1 dl majoneesia
1 rkl ryytsinappia
1/2 sitruunan mehu

Kuori ja kuutioi perunat ja keitä kypsiksi. Kuutioi suolakurkut ja silppua kevätsipulit. Sekoita kaikki ainekset keskenään ja anna salaatin vetäytyä hetken aikaa ennen tarjoilua.

Pikainen Majoneesi

400ml öljyä
2 keltuaista
1 kananmuna
1 rkl Dijon sinappia
1/2 sitruunan mehu
ripaus sokeria
suolaa
pippuria

Laita kaikki muut ainekset paitsi öljy tehosekoittimeen ja sekoita 10 sekuntia. Koneen ollessa vielä käynnissä kaada öljy joukkoon ohuena nauhana kunnes majoneesi on kiiltävää ja paksuhkoa. Resepti täältä.


We thought of making something light for lunch on Friday. End result was crispy schnitzel and creamy potato salad. Oh well, it was quite delicious anyway. I also made my own mayonnaise because in the middle of cooking I realised that we had run out of the shop bought one. 

Potato salad

about 1 kg potatoes
4 spring onions

couple of gherkins
2 tbsp capers
100 ml mayonnaise
1 tbsp grainy mustard
juice of half a lemon

Peel and cut the potatoes into cubes and boil until tender. Cube the gherkins and chop the spring onions. Mix all the ingredients and let the salad sit for few minutes before serving.

Quick Mayonnaise

400ml sunflower oil
2 egg yolks
1 whole egg
1 tbsp Dijon mustard
juice of half a lemon
pinch of sugar
salt 
pepper

Add everything else except the oil to a food processor. Mix for 10 seconds. While the machine is still on, add the oil by pouring it slowly until the mayonnaise is glossy and thick. Original recipe from here.

Blondies



Käytiin pötkylän kanssa kyläilemässä kaverilla eräs päivä ja ajattelin viedä tuliaiseksi jotain makeaa iltapäivä-teen seuraksi. Sain ystävänpäivä-lahjaksi T:ltä tosi kivan "Short and Sweet" (by Dan Lepard) -keittokirjan, jota olen tässä viime päivät lueskellut innolla. Sieltä nappasin näiden banaani-blondies:n reseptin, mitkä näyttivät helpoilta ja hyviltä.

Ääh, mikä pettymys. Runsas valkosuklaa ei maistunut taikinassa ihan yhtään, pähkinä-toffee oli aivan liian ällö-makeaa ja kokonaisuus oli muutenkin jotenkin ihan liian lälly. Ihan niinkuin raakaa taikinaa olisi syönyt. Ja se ei oikeasti ollut raakaa. Browniesia tehdessähän suklainen taikina täytyy jättää vähän kosteaksi, mutta koska tässä taikinassa käytettiin valkosuklaata joka kyllä ihan täysin tosiaan katosi taikinan makuun, sama homma ei toiminut ihan yhtään. Jopa ystäväni tytär nyrpisti nenäänsä näille: "Mummy, it's too sticky!". Totuus tulee lasten suusta, vai miten se meni?

Tekisinkö uudestaan? No en, tai jos tekisin niin laittaisin suklaan joukkoon palasina ja pähkinä-toffeen sijasta ehkä vaan ihan pelkkiä pähkinöitä. Jos nyt jotakin kuitenkin kiinnostaa super-makeat blondiet, niin tässä on ohje:

Banana-Blondies

300g sokeria
2 rkl kylmää vettä
75g rouhittuja brasilian pähkinöitä (itse käytin pekaani-pähkinöitä)
100g voita
200g valkoista suklaata
1 kananmuna
2 banaania
2 tl vanilja-uutetta
225g vehnäjauhoja
1/4 tl leivinjauhetta

Sulata 75g sokeria ja 2 rkl vettä pannulla, ja anna kiehua kunnes seos on muuttunut punertavan ruskeaksi. Lisää rouhitut pähkinät ja kaada seos leivinpaperin päälle jäähtymään. Leikkaa toffee palasiksi kun se on jäähtynyt.

Voitele tai peitä leivinpaperilla 20x20cm kakkuvuoka. Sulata voi ja valkoinen suklaa kattilassa miedolla lämmöllä. Kaada seos kulhoon, lisää loput sokerit ja vatkaa sekaisin munan, viipaloitujen banaanien ja vanilja-uutteen kanssa. Lisää jauhot ja leivinjauhe, sekä pähkinä-toffee ja sekoita.

Paista 170c uunissa n. 35 minuuttia kunnes pinta on ruskea ja keskusta vielä vähän pehmeä. Anna jäähtyä ennekuin leikkaat paloiksi.


Me and the little dude went to visit a friend the other day, and I thought of baking something sweet to go with our afternoon tea. I got a lovely "Short and Sweet" (by Dan Lepard) - cookery book which I've been browsing for the last week. The recipe for these banana blondies came from there, and I thought to give them a try as they looked quick and delicious.

Oh, what a disappointment. The taste of the white chocolate was totally lost, nut-toffee overly sweet and the whole thing just way too mushy. Almost like eating raw dough. And it definitely wasn't. Normally when you do brownies, you should leave the middle a bit gooey, but because this recipe used white chocolate, it just didn't work the same way. Even my friend's daughter wasn't impressed: "Mummy, it's too sticky!". The truth comes from kids, or what?

Would I make these again? No. Or if I would, I would add the white chocolate as chunks and instead of nut-toffee, just nuts. If anyone is still interested in making these super sweet blondies, here's the recipe:

Banana-Blondies

300g sokeria
2 tbsp cold water
75g chopped brazil nuts (I used pecans)
100g butter
200g white chocolate
1 egg
2 bananas
2 tsp vanilla extract
225g flour
1/4 tsp baking powder

Melt 75g sugar and 2 tbsp of water in a pan and let it bubble until the mix is reddish brown colour. Mix in the chopped nuts and pour the mixture into an oiled tray or baking paper to cool down. Chop the toffee into pieces after cooled down. 

Butter or cover with baking paper 20x20 cake tin. Melt the butter and white chocolate in a pan with a low heat. Pour the mixture in a bowl, and mix in the egg, remaining sugar, sliced bananas and vanilla extract. In the end add flour, baking powder and the nut-toffee and mix.

Bake the blondies in 170c for around 35 minutes until the top is light brown and the middle still a bit wobbly. Let the cake fully cool before cutting into squares.

Ikuisuus-projekti


Vihdoin ikuisuus-projektini valmistui. Mekko odotti nappeja (jotka oli jo valmiiksi ostettu!) pari viime kuukautta ja sain ne loppujenlopuksi kiinnitettyä eilen. Hyvä minä!

Mutta tässä tämä vihdoin on. Hirveitä tökötys-kuvia itsestä, mutta yritin vaan näyttää että miltä mekko näyttää päällä. Minusta siitä tuli ihan kiva.

I finally finished my project which has literally been going on forever. The dress was waiting for buttons (which I already had bought!) for the last few months and I managed to put them on at last yesterday. Well done me!

So here it is. These pictures are just horrible about myself, but I just wanted to show how the dress looks on. I quite like it.

Lättyjä, lettuja, eli Shrove Tuesday



Laskiaista! Täällä ei paljoa mäkiä laskeskeltu, vaikka lunta onkin tällä viikolla tullut, mutta lettuja syötiin sitäkin enemmän! Shrove Tuesday:n kunniaksi tehtiin illalliseksi oikein tupla-lettuläjät; pää- että jälkiruoaksi.

Olen kyllä enempikin laskias-pulla ihmisiä (onnistuin muuten pullissa viime vuonna ihan hyvin!), mutta kyllä letutkin eilen maistuivat. Suolaisten täytteeksi tuli paistettua pekonia kermaisen sienikastikkeen kera ja jälkkäri-letut meitsi haukkasi Nutellan kera ja T ripotteli sokeria ja sitruunankuorta omillensa.

Lettu-taikina syntyi ihan perus-ohjeella:

5dl maitoa
2 kananmunaa
ripaus suolaa
2dl vehnäjauhoja
2rkl öljyä


Shrove Tuesday! Traditionally in Finland you would be now sleighing out in the snow and then enjoying cardamon buns with cream and jam. Well, we had little bit snow this week and instead of buns I decided to do some pancakes at last. 

We had them both savoury and sweet, and they were really nice. For the savoury pancakes I made fried bacon and creamy mushroom- sauce and the sweet ones I had with Nutella and T sprinkled on some sugar and lemon rind to his.

The recipe for the pancakes:

500ml milk
2 eggs
pinch of salt
160g flour
2tbsp oil

Lauantaina - Leg of lamb


Lauantaina tämä äiti sai hiukka omaa aikaa ja suuntasi kampaajalle hemmoteltavaksi. Vaikka takaraivossa jyskyttikin hienohko huono omatunto nuhaisen pikku-tyypin jättämisestä pariksi tunniksi, päähieronta, cappucino ja läjä roskalehtiä oli aika herkkua.

Ja mikä parasta, kotiin tullessa keittiöstä löytyi tämä!


T oli pistänyt lampaan reiden marinadiin josta löytyi valkosipulia, lehtipersiljaa, timjamia, suolaa ja pippuria ja koko komeuden päälle oli vielä lorautettu reippaasti valkoviiniä. Parasta olisi jättää liha marinadiin vaikka yön yli, mutta me heitimme paistin uuniin jo tunteroisen jälkeen ja hauduttelimme sitä siellä kolmen tunnin ajan 150 asteessa.

Lisäkkeeksi tein helpot kermaperunat (vinkiksi Nigel Slaterin tapaan, että vuoka kannattaa pikaisesti pyyhkäistä valkosipulinkynnellä ennen perunoiden latomista) ja kyllä maistui.

On Saturday this mum got some me-time and booked herself an appointment with the hairdresser. Even though feeling slightly guilty leaving ill little dude home for few hours; a head massage, cup of cappucino and stack of trashy magazines really did the trick. 

And the best thing is that when coming home, I had this waiting in the kitchen!

T had marinated a leg of lamb in garlic, parsley, thyme, salt and pepper and poured over also some white wine. The best would be to leave the meat in the marinade even over night, but we put it in the oven after an hour or so and left it there for three hours, in 150c. 

To go with the meat I put together quick dauphinoise potatoes (tip from Nigel Slater: rub your dish with half a clove of garlic before putting the potatoes in), and boy it was nice.

Return


Ja vuoden bloggarin titteli menee... Kello Viiden Teelle!

NOT.

Että näin. Eipä ole paljoa täällä meikäläisiä näkynyt. Vuoteen on mahtunut uusi koti, uusi pieni miehen-alku, töistä pois jäänti ja mikä ehkä merkittävintä tätä blogia ajatellen: inspis-breikki ruoasta. Raskauden aikana kaikki ruoka ällötti, ja beibin jälkeenkin vielä pitkän aikaa kokkailu ei vaan kiinnostanut. Nyt vihdoin ruokahalu (varsinkin) ja kokkailu-into ovat alkaneet palailla, joten jospa me taas yritettäis.

Eli rakkaat lukijani, siis äiti ja anoppi, täällä ollaan taas.

Tänään vierailulle tuli ystävä ja hänen vauvansa, joten tekaisin aamulla tämän banaani-kakun jouruilujen seuraksi. Meidän pikku-pötkylä on aloittanut jo nyt kokki-uransa alkuvaiheet ja on tietty aina mukana keittiössä kun jotain kokkaillaan. Tänäänkin seurattiin silmä tarkkana kakun tekoa ja siinä samassa maisteltiin sitterissä josko banaanit olivat tarpeeksi hyviä leivontaan. Olivathan ne!

So been prettyyyy pretty quiet around this blog lately. Last year has been quite eventful with the new home, new little dude in the family, leaving work for a year and perhaps the most important thing considering this blog: inspiration break from food. During the pregnancy everything made me sick and even long after having the baby I just wasn't really into cooking. Now finally things are getting back to normal, so perhaps we should start again.

So my dear readers, aka my mother and Caroline, I'm back!

Today a friend visited with her baby, so I baked this quick banana-cake to go with the cup of tea and chatting. Our little man has also started his kitchen career and is most of the time with me in the kitchen if we are baking. Today he had a very important duty as a quality controller to check whether the bananas were good enough for the cake. The verdict from the baby bouncer was: YES.
