Scandinavian Cheese On Toast



Miksi lämpimät voileivät ovat aina niin kivoja? Jotenkin niissä on aina semmoinen lämpöisen lempeä tunnelma ja ihan parasta "comfort"-ruokaa viltin alla mutusteltaessa. Muistan joskus Suomessa aikoinaan tehneeni lämppäreitä Balkan-makkarasta (kyllä!) ja tomaattisiivuista ja saunan jälkeen ne tuntuivat ihan parhaimmalta asialta maailmassa. Nämä vähän tuunatummat voileivät toimivat melkein yhtä hyvin ja raikkaan salaatin kanssa ne ovat mukavia vaikka lounas-leipinä. Perheen hiilarittomalle tehtiin voileipien sijaan täytettyjä kesäkurpitsoja samalla täyttellä.

Skandinaavin Lämpimät Leivät

6-8 paahtoleipää
300g katkarapuja
200g creme fraichea
iso kourallinen raastettua Cheddar-juusto
2 pientä kevätsipulia
1 rkl Dijon-sinappia
1/2 sitruunan mehu
1 keltuainen
kourallinen tuoretta tilliä
suolaa
pippuria

Silppua kevätispulit pieneksi ja sekoita kaikkia ainekset keskenään. Paahda leivät paahtimessa ja asettele uunipellille. Levitä täyte leiville ja paista 200c uunissa n. 10-15 minuuttia, ja käytä lopussa leipiä pari minuuttia grillin alla.

In Finland we make these warm open sandwiches and thinking of them brings back very fond memories. They are more or less like cheese on toast, but you can basically cover the sandwiches with whatever and then just warm them in the oven. For me they are proper comfort-food and best especially after sauna. These ones that I made the other day are a bit fancier ones, and quite nice for example with fresh salad. I made some stuffed courgettes with the same filling for the family's non-carb-eater, and I think they were quite nice too.

Scandinavian Cheese On Toast

6-8 slices of toast
300g small prawns
250g creme fraiche
big handful of grated Cheddar
2 spring onions
1 tbs Dijon-mustard
juice of 1/2 lemon
1 egg yolk
handful of fresh dill
salt
pepper

Chop the spring onions and mix all the ingredients together. Toast the bread slices and place in the oven tray. Spread the filling on toasts and bake in the 200c oven for 10-15 minutes and in the end place under the grill for a minute or two.

Lamb and lentils - elämää ilman liettä



Perjantai-aamuna meillä käväisi pari heppua tarkastamassa boileria ja hups! - keittiön kaasuliesi suljettiin väliaikaisesti kunnes kaasuputkien jotkut osat on vaihdettu uusiin. Lauantain illalliskutsu meni hieman uusiksi, koska kokkaaminen kuudelle ihmiselle ei oikein houkuttanut pelkän uunin ollessa käytössä. Joten illallisia siirrettiin ja me opeteltiin elämään ilman liettä viikonlopun ajan.

Olin aiemmin napannut kaupasta mukaani kivan näköiset lampaan potkat, ja tuntui että ne olivat nyt ihan täydelliset illalliseksi ihanan linssimuhennoksen kera. Aivan mainiosti ruoka syntyi pelkästään uunissa, mutta jos liesi olisi ollut käytössä olisin varmaankin kuullottanut sipulit ensin pannulla ja ehkä vielä ruskistanut potkatkin ennen pataan laittoa. Todella hyvää silti tuli, ja linssit olivat vielä parempia seuraavana päivänä lämmitettäessä.

Lampaan potkaa ja linssimuhennosta

n. 1kg lampaan potkia
1 iso sipuli
3 valkosipulinkynttä
300g vihreitä linssejä
500g tomaatteja
1 iso munakoiso
n. 1l lihalientä
1 laakerinlehti
loraus hunajaa
pari tuoretta rosmariinin oksaa
1 rkl kuivattua chilirouhetta
suolaa
pippuria

Kuumenna uuni 200c ja paista lampaita n. 25 minuuttia kunnes ne ovat ruskistuneet. Siirrä potkat jäähtymään ja käännä uuni 170c. Kuullota uunipadassa silputtu sipuli ja valkosipuli viitisen minuuttia ja lisää sitten kuutioidut tomaatit ja linssit pataan. Sekoita ja kaada joukkoon lihaliemi, rosmariini ja laakerinlehti, chilit, hunaja ja suola ja pippuri. Upota lampaanpotkat pataan, peitä kannella ja laita uuniin 45 minuutiksi. Tämän jälkeen kuutioi munakoiso reippaiksi kuutioiksi ja lisää pataan. Maista josko pata tarvii lisää suolaa tai pippuria ja laita muhimaan uuniin vielä 45 minuutiksi. Tarjotessa ripottele päälle tuoretta korianteria.


We had a visitor on Friday morning from our gas company and he decided to switch off our hobs until some pipes had been fixed or something. It wasn't the best thing to happen considering that I had 6 people coming for dinner on Saturday and cooking without a hob was literally impossible. In the end we just had to postpone the dinner and me and T had to learn how to live without a hob for the weekend.

I had picked up couple of lamb shanks from the shop earlier during the week, and they looked like a perfect thing to cook now. The whole dish was cooked perfectly even without the hob, but next time I think I would fry the onions in a pan first and perhaps take come colour to the shanks as well before putting them in the oven. Anyway, it was all still very delicious and the lentils were even better the next day!

Lamb and lentils

about 1kg lamb shanks
300g green lentils
1 big onion
3 cloves of garlic
500g tomatoes
1 big aubergine
about 1l beef stock
1 bay leaf
2 sprigs of rosemary
little bit of runny honey
1 tbs dried chili flakes
salt
pepper

Put the oven on for 200c and bake the lamb shanks 25 minutes until they are nice and brown. Take out from the oven and lower the heat to 170c. Fry the chopped onion and garlic in a casserole until soften. Add the lentils, chopped tomatoes and stir. Pour in the chicken stock, bay leaf, chopped rosemary, honey, chillies and salt and pepper. Sink the shanks in to the casserole, cover with lid and place in the oven for 45 minutes. After this, chop the aubergine into big chunks and add to the casserole. Taste for the seasoning and add anything if needed. Leave in the oven for another 45 minutes and sprinkle with loads of fresh coriander when serving.

Mapo Dofu


Tofua tulee aika harvoin kokattua, mutta tämä Mapo Dofu on melko suosikki meidän keittiössä. Sarjassamme hyvää ja nopeasti, tämä satsi rankataan kyllä melko korkealle. Riisin kanssa Mapo Dofu on ihan täydellisen pikainen arkiruoka. Resepti on Amy Kanekon "Let's Cook Japanese Food" - kirjasta.

Mapo Dofu

500g porsaan jauhelihaa
1-2 isoa palaa tofua
4 valkosipulinkynttä
3cm pätkä tuoretta inkiväärtä
6 pientä kevätsipulia
2,5 dl kanalientä
2 rkl soijakastiketta
2 rkl kiinalaista chilli-bean tahnaa
2 tl sokeria
2 rkl osterikastiketta
2 rkl sakea

4 tl peruna- tai maissitärkkelystä
4 tl kylmää vettä

Silppua kevätsipulit (jätä pari vihreää vartta koristeeksi), valkosipulit ja inkivääri pieneksi silpuksi ja kuullota pannulla pari minuuttia. Lisää jauheliha ja paistele kypsäksi. Kaada joukkoon kanaliemi, chilli-bean tahna, soijakastike, sokeri, sake ja osterikastike, ja sekoita kunnolla. Paloittele tofu varovasti haluamasi kokoisiksi kuutioiksi ja lisää kastikkeeseen. Sekoita varovasti ja paistele sen aikaa kunnes tofu on lämmennyt kunnolla. Sekoita peruna- tai maissitärkkelys ja kylmä vesi kunnolla keskenään ja kaada kastikkeen joukkoon. Kiehuttele pari minuuttia kunnes kastike on sakeutunut hieman ja lisää sitten loput silputut kevätsipulit ja pieni loraus seesami-öljyä. Tarjoile kuuman riisin kera.


Tofu is one of those things that I don't really use that much, but there is one dish that appreas in our kitchen quite often. This Mapo Dofu is easy, fast and delicious - it's perfect dinner for a school night. Recipe is from Amy Kaneko's "Let's Cook Japanese Food" - book.

Mapo Dofu

500g pork mince
1-2 blocks of tofu
4 cloves of garlic
6 spring onions
3cm piece of ginger
250 ml chicken stock
2 tbs chinese chilli bean paste
2 tbs soy sauce
2 tbs sake
2 tbs oyster sauce
2 tsp sugar

4 tsp corn starch
4 tsp cold water
sesame oil

Chop the spring onions (leave the green parts of two to garnish), ginger and garlic into fine and fry in a pan for couple of minutes until soften. Add the mince and fry until cooked. Then pour in the chicken stock, chilli bean paste, soy, sake, oyster sauce and sugar and mix well. Chop the tofu carefully into cubes. Add them in the sauce, mix carefully and let the sauce bubble until the tofu has warmed. Mix the corns starch and water together well and pour into the sauce. Cook for couple of minutes until the sauce has thickened a bit and then add the rest chopped spring onions and couple of drops of sesame oil. Enjoy with hot rice.

Kuorukat osa 2



Pöydällä oli nököttänyt paketti uuniperunoita jo jonkin aikaa, ja mikään niissä ei oikein innostanut. Kun näytti että nyt kyllä viedään viimeistä näillä perunoilla, heitin ne uuniin ja mietin että mitä niistä tekisi. Selailin Silver Spoonia, ja sieltä löytyi kivan näköinen kuorukka-resepti. En tiedä mikä noissa kuorukoissa minua viehättää, mutta ne kyllä tuntuu olevan ihan meikäläisen juttu. Seuraavalla kerralla taidan kieräistä vielä kuorukan sisään tulevan juustotangon ja kinkkusiivun ympärille lehden basilikaa, ja ehkä laitan vielä vähän enempi juustoakin.

Kuorukat

800g uuniperunoita (tai muita jauhoisia perunoita)
3 kananmunaa
50g raastettua parmesaania
suolaa
pippuria
Gruyere-juustoa
kinkkua
(tuoretta basilikaa halutessa)
korppujauhoja tai Pankoa

ruoka-öljyä paistamiseen

Paista uuniperunat uunissa kypsiksi, tai keitä perunat vedessä ja kuivaa hyvin. Muussaa koko satsi ja sekoita joukkoon parmesaani, yksi kokonainen kananmuna ja yksi keltuainen sekä suola ja pippuri. Riko jäljelle jäänyt kananmuna matalaan kulhoon ja sekoita. Ripottele korppujauhot tai Panko toiselle lautaselle leivitystä varten. Pyörittele perunamuusista golf-pallon kokoisia palluroita, ja työnnä niiden sisälle kinkkuun kääritty juustopala (halutessa tässä vaiheessa voi juuston ja kinkun vielä kääräistä basilikan-lehden sisään). Varmista että juusto on kunnolla palluroiden sisällä, koska paistettaessa se muuten valuu ulos. Pyöritä valmiit pallerot ensin kananmunassa ja sitten korppujauhoissa. Kuumenna öljy syvässä pannussa tai paksupohjaisessa kattilassa, ja testaa leipä-palalla milloin se on tarpeeksi kuumaa. Jos leipä jää kellumaan hiljalleen öljyyn ilman minkäänlaista sihinää, on öljy liian kylmää. Muistakaa olla varovaisia kuuman öljyn kanssa, pitäkää kansi koko ajan lähellä ja älkää jättäkö öljyä vartioimatta ollenkaan. Paistele kuorukat viitisen minuuttia, tai kunnes ne ovat ottaneet kivan värin. Valuta leivinpaperin päällä, ja nauti raikkaan salaatin kera.

I had a bag of baking potatoes lying in the kitchen and for some reason I just wasn't feeling them at all. After a week they started to look already a bit sad so I chucked them in the oven and started to go through the cookbooks in order to find some recipe for them. From Silver Spoon I spotted quite a simple croquette-recipe, and I don't know what it is with croquettes and me - we just like each other! Next time I would potentially wrap the cheese and ham going inside of the croquettes to a leaf of fresh basil, and also I think I would add a bit more cheese.

Croquettes

800g baking or any floury potatoes
3 eggs
50g fresh grated parmesan
salt
pepper
Gruyere cheese
ham
breadcrumbs or Panko

vegetable oil for frying

Bake the potatoes in the oven or boil them in the water, but remember to drain well. Mash all the potatoes in a bowl, add the parmesan, one whole egg and one yolk and salt and pepper. Mix well. Break the last remaining egg in a shallow bowl and whisk lightly. Pour the breadcrumbs on another plate. Roll the mash into little balls sized of a golf ball. Stick a piece of cheese wrapped in some ham (in this case you could wrap the whole thing again with a basil leaf) inside of the balls and make sure that nothings sticks out. Otherwise the cheese will ooze out when frying. Coat the balls with some egg, then toss around in the breadcrumbs. Heat the oil in a pan and try with a little piece of bread or Panko when it's ready. If it doesn't make a sound and just lies in the oil, the oil is still too cold. Be very careful with hot oil and keep always something available to coat the pan in case of the emergency. Also do not ever leave the kitchen when having hot oil in the stove. Fry the croquettes in the pan for five minutes or until they are nice and golden brown. Drain on top of a kitchen towel and then enjoy with some fresh salad.

Carrot Cake



Nuorempana tätä porkkana-kakkua tuli tehtyä aika useinkin. Luulin että meillä ei perheessä tainnut kukaan muu tästä pitää kuin minä, mutta syynä kyllä saattaa olla sekin että muut tuskin huomasivat kakun ilmestymistä ennenkuin meikäläinen oli jo ahmaissut koko herkun! Tänään jostain syystä vanha kunnon kakku tuli mieleen ja Lauantai-illan ratoksi tekaisin sen meille teen kanssa naposteltavaksi. Kakku on kyllä mielestäni parhainta seuraavana päivänä. Hei ja kuulin jonkun kutsuvan tätä kakkua porkkana-piirakaksi. Eikö porkkana-piirakat olekkaan niitä karjalanpiirakoita joihin riisin mukaan on laitettu mukaan porkkanaa...?

Porkkana-kakku

3 kananmunaa
2.5 dl sokeria
4 dl vehnäjauhoja
1 rkl leivinjauhetta
1 rkl kanelia
1/2 tl suolaa
200g sulatettua voita
4 dl raastettua porkkanaa
1 dl ananasmurskaa

ananasmehua kakun kostuttamiseen

200g maustamatonta tuorejuustoa
1 prk maitorahkaa
3dl tomusokeria
1 rkl maitoa
1 rkl sitruunamehua

pähkinärouhetta koristeluun

Vatkaa sokeri ja munat kuohkeaksi vaahdoksi. Sekoita joukkoon jauhot, leivinjauhe, kaneli ja suola. Kaada mukaan sulatettu voi, porkkanat ja ananakset ja kaada leivontavuokaan. Paista 200c uunissa n. 30 minuttia. Anna kakun jäähtyä ja kostuta sitten ananasmehulla. Sekoita kaikki kuorrutuksen aineet keskenään ja levitä kakkupohjan päälle. Koristele pähkinärouheella ja nauti!


I used to make this carrot cake quite often when I was younger. I thought that nobody else in my family liked it, but now I think that the case was that they didn't ever even know about it's existence because I used to eat it so fast by myself! For some reason I thought about the cake today and made it for us to enjoy with the tea. I think the cake is actually even better the next day. Please note that the ingredients are in decilitres instead of grams because the recipe is Finnish. We always use decilitres when cooking and baking and it took me a while to get used to the grams-system. I realised that with English recipes it's easier if you just get yourself a scale.

Carrot Cake

3 eggs
2,5 dl sugar
4 dl flour
1 tbsp baking powder
1 tbsp ground cinnamon
1/2 tsp salt
200g melted butter
4 dl grated carrots
1 dl chopped pineapple rings (from the tin)

pineapple juice to moisten the cake

300g cream cheese
100g creme fraiche
3 dl icing sugar
1 tbsp lemon juice

chopped hazelnuts to garnish

Whip the eggs and sugar into airy foam. Add the flour, baking powder, cinnamon and salt and mix well. Pour in the melted butter, carrots and chopped pineapples and mix. Pour into a baking dish and bake in 200c oven for 30 minutes. Leave it to cool and then moist the cake with little bit of pineapple juice. Mix together all the icing ingredients and pour on top of the cake. Garnish with some chopped hazelnuts and enjoy!

Moussaka



Perjantai-ilta, lasi punaviiniä ja Moussaka. Tarviiko sitä nyt sitten muuta sanoakkaan?

Moussaka

3 isoa munakoisoa
1 iso sipuli
4 valkosipulinkynttä
500g lampaan jauhelihaa
1 prk tomaattimurskaa
1,5 dl punaviiniä
2 tl jauhettua juustokuminaa
2tl kuivattua oreganoa
1 rkl kanelia
suolaa
pippuria
tuoretta basilikaa
tuoretta minttua

50g voita
50g jauhoja
n. 5dl maitoa
1 kananmunan keltuainen
kourallinen cheddar-juustoa
muskottipähkinää
suolaa
pippuria

Leikkaa munkoisot 1cm leveiksi kiekoiksi ja paista pannulla pienessä tilkassa oliiviöljyä kunnes ne ovat kivan ruskeita ja pehmenneet. Siirrä sivuun odottamaan moussakan kokoamista. Koko satsin paistaminen kestää jonkin aikaa, mutta uskokaa, kyllä se on sen arvoista. Silppua sipuli ja paista pannulla runsaassa oliiviöljyssä n. 5minuuttia. Lisää silputut valkosipulit ja paistele vielä pari minuuttia. Lisää jauheliha ja paista kunnes suurin osa rasvasta on haihtunut pannulta. Lisää tomaattimurska, viini ja mausteet ja jätä miedolle lämmölle porisemaan. Lisää tuore basilika ja minttu jauhelihaseokseen juuri ennen kuin kokoat moussakan.

Seoksen poristessa pannulla, valmista bechamel-kastike. Laita kasariin voi ja jauhot ja sekoittele kunnolla pari minuttia. Lisää sitten maito pienissä erissä koko ajan sekoittaen. Voit jättää lisäämättä, tai lisätä maitoa kastikkeeseen riippuen minkälaisen koostumuksen haluat. Kun kastike on valmis, siirrä sivuun, lisää reilu kourallinen raastettua juustoa (säästä pieni määrä vielä ripoteltavaksi moussakan päälle) , ripaus muskottipähkinää, suolaa ja pippuria sekä kanamunan keltuainen ja sekoita kunnolla.

Kokoa moussaka. Pistä pieni lusikallinen jauhelihaseosta uunivuoan pohjalle, ja levitä päälle munakoiso-kiekkoja kunnes pohja peittyy. Lisää päälle taas jauhelihaseosta, ja peitä munakoisoilla. Jatka tätä kunnes vuoka on täynnä. Kaada päälle behamel-kastike, ripottele päälle vielä hieman juustoa ja laita 200c uuniin n. 45-60 minuutiksi. Anna moussakan levätä 10 minuuttia ennen tarjoilua.


Friday night, glass of red wine and Moussaka. Do I really have to say anything else?

Moussaka

3 big aubergines
1 onion
4 gloves of garlic
500g lamb mince
1 can of chopped tomatoes
1,5 dl red wine
2 tsp ground cumin
2 tsp dried oregano
1 tbsp ground cinnamon
salt
pepper
fresh basil
fresh mint

50g butter
50g flour
about a pint of milk
big handful of grated cheddar
1 egg yolk
ground nutmeg
salt
pepper

Cut the aubergines into 1cm slices and fry in a pan with a little olive oil until brown and soft. Frying the whole amount takes some time, but it's definitely worth it. After frying, set the aubergines aside to wait. Chop the onion and fry in a pan with a generous amount of olive oil for 5 minutes. Add the chopped garlic and fry for another couple of minutes. Add in the lamb mince and fry until almost all the fat has disappeared from the pan and meat has started to take some colour. Pour in the chopped tomatoes, wine and the spices and let it bubble in a low heat for a little while. Only add the fresh basil and mint just when you're about to assemble the moussaka.
In the mean time, make the béchamel sauce. Fry the butter and flour in a cooking pan for couple of minutes until the flour has cooked. Remember to keep stirring all the time. Then start adding the milk little by little, constantly stirring, until the consistency is nice and smooth. Take the pan off the heat, add the cheese (leave some to sprinkle on top in the end), nutmeg and salt and pepper and stir.
Assemble the moussaka. Put a spoonful of meat sauce in the bottom of an oven dish and cover with the aubergine slices. Pour some more meat sauce on top and again cover with aubergine slices. Continue doing this until you are finished with the sauce and the aubergines. Pour the béchamel sauce on top, sprinkle with little bit of cheese and put it in the 200c oven for 45-60 minutes. Let the moussaka rest for 10 minutes before serving.

Yllätys oven takana



Sunnuntai-iltana tuli tieto että ulkona oven takana odottaa pieni yllätys. Nappasin ovelta pienen painavan paketin joka näytti tältä:


Sisältä löytyi kilo-pari pieniä maa-artisokkia, resepti artisokka-keittoon ja iso oksa tuoretta rosmariinia. Jee!

Keitto oli helpoista helpoin, ja maistui ihanalta. En muista milloin olisin maa-artisokkia viimeksi syönytkään ja niiden makeahko ja pähkinäinen maku on ihan mahtavaa. Paistoin keiton seuraksi hieman rapeaa pekonia ja lorautin keiton päälle kulhoissa hieman ihanan tumman vihreää kurpitsa-öljyä. Onneksi keiton tehtyä jäljelle jäi vielä puolisen kiloa mukuloita, joten jospa vaikka jonkun kivan gratiinin tekaisisi viikonloppuna.

Maa-artisokka keitto

500g maa-artisokkia
n. 1 litra kanalientä
1 valkosipulinkynsi
250ml kermaa
suolaa
pippuria
rapeaksi paistettua pekonia

Pese artisokat kunnolla, ja kuori. Säästä kuoret, ja laita ne sekä kokonainen kuorimaton valkosipulinkynsi kanaliemeen kiehumaan hiljalleen n. 20 minuuttia. Siivilöi kuoret ja valkosipulinkynsi pois, ja lisää pilkotut artisokat. Kun keitto alkaa taas pikkuhiljaa kiehumaan, lisää kerma ja suola ja pippuri ja kiehuttele kypsäksi. Kun artisokat ovat pehmeitä, hurauta koko komeus tehosekoittimella sileäksi. Ripottele halutessa rapeaa pekonia keittoihin mukaan tarjoiltaessa.


On Sunday evening I got a message that something was waiting for me outside of our front door. I picked up a little cute bag, and found inside about a kilo or more Jerusalem artichokes, recipe for a soup and a big sprig of fresh rosemary. How amazing!!

The soup was the easiest thing to do and tasted fantastic. I can't remember when was the last time that I've had Jerusalem artichokes and their sweet and nutty flavour is just lovely. I fried some crispy bacon and sprinkled it to the soup bowls to go with the soup, and lastly drizzled some beautiful dark green pumpkin oil on top. Luckily I still have about half a kilo left of those artichokes, and hopefully I'm able to make some kind of gratin out of them this weekend!

Jerusalem artichoke soup

500g Jerusalem artichokes
about 1 litre of chicken stock
1 clove of garlic
250ml double cream
salt
pepper
(crispy bacon)

Rinse the artichokes properly and peel. Keep the peels and put them as well as one un-peeled garlic clove in the chicken stock and boil for about 20 minutes. Then sieve the peels and the garlic and put the stock back to the pan with the chopped artichokes. Bring to boil and add the cream and salt and pepper. Boil until the artichokes are soft and then blitz the whole thing with a blender into smooth soup. Sprinkle some crispy fried bacon on top of the soups when serving.
