Ceviche


T oli (aivan liian) pitkällä työmatkalla viime viikot, ja paluun kunniaksi halusin kokkailla jotain kivaa. Samalla pidimme myös meidän loman aloittajaiset, joten oli enemmänkin syytä juhlaan. Tein alkuruoaksi cevicheä mikä on siis limetin mehussa kypsytettyä raakaa kalaa.

Periaatteessa mikä tahansa vaalea kala käy tarkoitukseen hyvin, mutta kalan täytyy olla tosi tuoretta koska se pelkästään raakakypsytetään limetin mehulla. Minä käytin tällä kertaa turskaa ja paloittelin fileen kivoiksi suupaloiksi. Puristin päälle kahdesta limetistä mehut, siivutin kokonaisen punaisen chilin joukkoon ja heitin mukaan vielä ohuenohueksi siivutetun puolikkaan punasipulin. Ripaus suolaa ja pieni kourallinen korianteria ja jääkaappiin muhimaan pariksi tunniksi.

Söimme cevichen tortillasipsien, muussatun avocadon ja kylmän oluen kera. Loma alkakoon!


T has been (way too long) for a business trip during the last couple of weeks, and as he returned I wanted to cook something nice. It was also the start of our holiday so it was definitely time for some celebrations. I decided to start the evening with ceviche, lime-marinated raw fish.

Basically any kind of white fish is good for this, but the main thing is that the fish has to be super fresh. The fish stays raw and the lime juice will cook it. I used cod this time and chopped it into bite-size pieces. I topped the fish with the juices from two limes, chopped one whole red chilli to go with and sliced a red onion very thinly and added in. Sprinkle of salt and some chopped coriander went in and I placed the whole thing into the fridge for couple of hours.

We had the ceviche with tortilla chips, avocado and cold beer. Let the holiday begin!

Poncho



Syksyiset sateet ovat tuoneet mukanaan taas innon käsitöihin. Kynttilät, viltti, lasi punaviiniä ja kiva kudelma kädessä, ihanaa! Nyt kun aikaakin on ollut vähän enemmän, sain aikaseksi tekaistua viime viikolla Kalastajan Vaimon ohjeella kivan ponchon.

With the autumn rains, my interest for knitting has returned. Candles, blanket, a glass of red wine and a nice knitting project, perfect! Now when I have had a bit more time, I was able to make this great poncho last week. Instructions came from here.

Vietnamilaista kanaa pavuilla


Vietnamilainen keittiö on ehdottomasti yksi suosikeistani. Voisin syödä loputtomiin Pho-nuudelikeittoja tai napostella kesäkääryleitä päivittäin. Vietnamilainen ruoka on erittäin aromaattista, ja esimerkiksi Thai-ruokaan verrattaessa minun mielestä paljon raikkaampaa. Mausteina käytetään sitruunaruohoa, limettiä, minttua ja korianteria. Mitä näistä voisi vastustaa!

Tässä nopeassa wokissa maistuu ihanasti karamelisoitunut sipuli, raikas sitruunaruoho ja minttu ja etikka tuo mukaan tosi kivan potkun. Helppoa kuin heinänteko!

4 luutonta kananrintaa/reittä
2 sipulia
5 valkosipulinkynttä
2 sitruunaruohoa
3 punaista chiliä
250g vihreitä papuja
2 rkl sokeria
2 rkl Thai-kalakastiketta
2 rkl riisiviina-etikkaa
pieni kourallinen minttua

Kuumenna wokki kuumaksi. Paista pilkotut kanat pikaisesti wokissa ja siirrä sivuun. Leikkaa sipulit ohuiksi renkaiksi ja paista ne, pilkotut chilit ja valkosipulit ja ohueksi silputtu sitruunaruoho pannulla kunnes sipulit ovat pehmenneet ja ottaneet väriä. Lisää vihreät pavut ja sokeri ja paistele kunnes pavut ovat kypsyneet. Lisää kanat takaisin wokkiin ja mausta kalakastikkeella ja etikalla. Lisää minttu juuri ennen tarjoilua ja nauti riisin tai nuudeleiden kera.


Vietnamese cuisine is definitely one of my favourites. I could live only by eating Pho-noodle soups or munching away lovely and fresh summer rolls. Vietnamese food is extremely fragrant and in my opinion compared for example to Thai-kitchen, more fresh and aromatic. They use a lot of lemon grass, lime, mint and coriander. Which one of there can you resist!

In this super quick stir fry you can taste lovely sweet caramelised onions, fresh lemon grass and mint, and the vinegar gives it a good kick in the end. Easy peasy lemon squeezy!

4 boneless chicken thighs
2 onions
5 cloves of garlic
2 stems lemon grass
3 red chillies
250g green beans
2 tbsp sugar
2 tbsp fish sauce
2 tbsp rice wine vinegar
small handful of mint

Cut the chicken into bite-size pieces and fry quickly in the wok. Take the chickens out and add the finely sliced onions, chopped chilies and garlics and very finely sliced lemon grass. Fry until the onions have soften and taken some colour. Add then the beans and sugar and fry until the beans have cooked through. Add the chicken and pour in the fish sauce and the vinegar and just before serving sprinkle the mint in. Serve with rice or noodles.

Karelian Pies



Nyt kesällä Suomessa ollessamme, T ihastui karjalanpiirakoihin. Mielestäni olen niitä kyllä syöttänyt aikaisemminkin, mutta mitään muistikuvaa ei kuulemma tästä kuitenkaan ollut. Kotiin tultuamme mietin josko uskaltaisin koettaa kyseisten piirasten tekoa ihan itse täällä länsi-Lontoon pikku-keittiössä. Sain kun sainkin äidiltä reseptin (minkä sitten kylläkin hukkasin ja käytin lopulta HS:n sivuilta löytynyttä ohjetta...) ja lähdin metsästämään ruisjauhoja. Ja yllättävän helposti niitä sitten löytyikin!

Vaikka itse sanon niin kyllä näistä tuli tosi hyviä. Rypytys nyt meni vähän niin ja näin, mutta ihan ok minun mielestä ensikertalaiselle. Ja ehkä ensi kerralla laitan mukaan hieman vehnäjauhoja ruisjauhojen sekaan jotta taikinasta ei tule niin... ruista? Dippasin piirakat vielä paiston jälkeen maito-voi-seoksessa ja pyöräytin seuraksi perinteisen munavoin. Harmi vain että T on tämän viikon työmatkalla, ja "jouduin" nauttimaan piirakoista ihan itsekseni. Jospa niitä pari jää vielä pakkaseen niin saa matkalainen sitten maistella josko ne maistuvat yhtä hyviltä kuin lomalla.

Back in the days an area called Karelia was part of Finland. This is located in the South-East from Finland, between Finland and Russia. When Finland lost the war against Russia at WW2, part of the war payments included Karelia to be given to Russia. Most of the people had to move to Finland then and sadly they were only allowed to go back and see their homes after the Soviet Union collapsed. Obviously many of them never saw that day, and this matter has always been very talked in Finland. Around 1970's and 80's there were political campaigns to try to get the area back to Finland.

My grandmother's family was from that area. The things that reminded me of that with her was the way that she talked, specific dialect, as well as the most delicious Karelian Casserole that she cooked for us. There are also little pies called Karelian Pies which are from there. When we were visiting Finland this summer, T fell in love with them. I'm sure I've given him some before, but apparently this is not the case. These pies are made of rye flour, filled with salty rice pudding and served with eggy butter. Sounds a bit bonkers, but I guarantee, they are lovely.

Karelian Pies

Pastry:

2,5 dl water
5-6 dl rye flour
1/2 tsp salt

Filling:

2,5 dl water
20g butter
2 dl short grain rice
7 dl milk
1/2 tsp salt

Dipping sauce:

2dl milk
20g butter

Boil the water, butter and the rice together for 10 minutes or so. Add the milk and salt and let it simmer until rice is cooked, and you have a nice consistency of rice pudding. Let it cool. Mix together the pastry ingredients and mix until you have a firm ball which is not sticking to the bowl. Create a long sausage from the dough and cut it into 50 little pieces or so.

Cover the pieces with a cloth so they won't dry out. Roll the pieces into round shapes with a rolling pin, put a spoonful of rice pudding in the middle and then pinch the sides together.



Bake in the oven with the hottest temperature about 15-20 minutes. For the dipping sauce warm the milk and butter and as soon as the pies come out from the oven, dip them quickly to the dipping sauce and leave to cool.
The pies are always eaten with an eggy butter which you make by chopping couple of hard boiled eggs and mixing them to a soften butter. Spread this on the pies. Delicious!

Oyakodon


Eräänä väsyneenä Sunnuntaina T kokkasi meille illalliseksi aivan ihanan Oyakodonin. Miten onkin että jotkut ruoat ja tilanteet vaan sopivat niin hienosti yhteen. Sinä Sunnuntaina en voinut kuvitellakaan muuta kuin höyryävän kulhon riisiä ja maukasta, makeahkoa Oyakodonia. Tarkoitus on että osa kanamunista on vielä hieman puoli-kypsää sitä syötäessä, mutta jos tämä ei innosta niin lisätkää vaan kaikki munat samaan aikaan ja hauduttakaa kypsiksi. Tämän Oyakodonin resepti lähti hieman mukaillen Amy Kanekon "Let's Cook Japanese Food!"- kirjasta. Älkää säikähtäkö kuvaa, ruoka on oikeasti ihan älyttömän hyvää ja myöskin tosi helppo valmistaa.

Oyakodon

2 luutonta kananreittä
1/2 sipuli
4 kananmunaa
150g siitakesieniä

1 rkl sakea
3 rkl soijakastiketta
2 rkl miriniä
1,5 rkl sokeria
2,5 dl dashia (tai kanalientä)

Leikkaa kanat suupaloiksi, viipaloi sienet ja siivuta sipuli ohuiksi puoli-renkaiksi. Kaada sake, soija, mirin, sokeri ja dashi (tai kanaliemi) paistinpannuun ja anna kiehua hiljalleen pari minuuttia. Lisää kanat ja anna hautua n. 5 minuuttia. Lisää sipulit ja sienet ja anna liemen porista kunnes kanat ovat kypsiä ja sipuli pehmennyt. Riko ja vatkaa kananmunat rikki kulhossa. Kun kanat ovat kypsyneet, kaada 3/4 munista pannuun ja peitä kannella. Anna kypsyä n. 5 minuuttia ja sen jälkeen kaada päälle loput munista ja tarjoa heti riisin kera.


One lazy Sunday T cooked us fantastic Oyakodon for dinner. It's funny how some food and situations are meant together, I couldn't have thought better dinner for that day. Lovely steaming bowl of rice topped with a sticky, sweet Oyakodon. The purpose is to leave some of the eggs still runny when eating it, but if you're not comfortable with this just add all the eggs together at the same time and let them cook through. This Oyakodon recipe came more or less from Amy Kaneko's "Let's Cook Japanese Food"-book. Don't be afraid of the picture, this dish is seriously delicious and very easy to make.

Oyakodon

2 boneless chicken thighs
1/2 onion
4 eggs
150g shitake mushrooms

1 tbsp sake
3 tbsp soy sauce
2 tbsp mirin
1,5 tbsp sugar
2,5 dl dashi (or chicken stock)

Cut the chicken into bite-size pieces, slice the mushrooms and slice the onion into thin slices. Combine the sake, mirin, soy sauce, sugar and dashi in a frying pan and let simmer for couple of minutes. Add the chicken and cook for 5 minutes. Add the onions and mushrooms and let cook until chicken is done and onions soften. Whisk the eggs in a bowl, and when the chicken is cooked pour the 3/4 of the eggs on top. Cover the pan and let it cook about 5 minutes until the egg has set. The pour the remaining eggs and serve immediately with a bowl of rice.

Helpoista helpoin



Varsinaista pikaruokaa syntyi taas tuossa pari päivää sitten. Poistin kananreisistä luun, suolasin ja pippuroin ja paistoin pannulla nahkapuoli alaspäin kunnes nahkasta oli tullut mukavan rapea. Käänsin ja paistoin kypsäksi ja otin pois pannulta. Kanat voivat ihan hyvin tehdä uunissakin mutta pannulla minusta tulee ehkä hieman rapeampi nahka. Kaadoin suurimman osan pannusta olevasta rasvasta pois ja lisäsin mukaan pari silputtua valkosipulinkynttä, tuoretta chiliä ja pari ruokalusikallista soijaa ja hieman vettä. Keittelin hieman kasaan ja samalla höyrytin pikaisesti parsakaalta, herneenpalkoja ja keltaista paprikaa. Kanat hetkeksi takaisin pannulle, valmiiden kasvisten sekaan pari tippaa seesamiöljyä ja se oli siinä. Tarjotessa kaada loput pannussa olevasta kastikkeesta kanan päälle.

I did some super fast food again couple of days ago. I removed the bones from the chicken thighs, rub them with little salt and pepper and fried on a pan skin-side down until the skin was crispy. Then turned the chicken, fried until cooked through and removed from the pan. The chicken can be done in oven as well but for some reason I think the crispier skin comes in a pan. I poured most of the fat from the pan away and then added some chopped garlic, fresh chilli, soy sauce and little bit of water. I let it reduce for a while and in the mean time steamed some broccoli, sugar snap peas and yellow pepper. I put the chickens to the pan again just to heat them up, poured couple of drops of sesame oil on the veg and that's it. Pour remaining juices from the pan on top of the chicken when serving.

Pizza with pals



Pari viikkoa on kulunut ihan ilman bloggailuja, mutta kun ohjelmassa on ollut Suomessa lomailua ja muuta kesä-meininkiä niin eihän sitä vaan ole ehtinyt!

Viikonloppuna kokoonnuttiin ystävien kanssa yhteen ja päätettiin pitää kunnon pizza-iltamat. Ja miten hienosti meillä tiimi toimikaan! Taikina kohosi hetkessä, tomaattikastike saatiin porisemaan hyvissä ajoin, ja jokaisen itse suunnittelemat, yhteensä 8 erinlaista pizzaa maistuivat kaikki erinomaisilta! Hieman mietitytti josko normaali sähköuuni pystyisi paistamaan pizzat tarpeeksi rapeiksi, mutta pohjista tuli aivan mahtavia!


Pohjaan käytimme Jamien reseptiä, ja kyllä kannatan kunnon "00" jauhojen käyttämistä, ero oli huomattava! Reseptistä meillä tuli 8 ihan hyvän kokoista pizzaa.

Pizza-pohjat

1 kg "00" pizza-jauhoja
1 rkl suolaa
2 pussia (á 7g) kuivahiivaa
1 rkl sokeria
4 rkl oliiviöljyä
650 ml kädenlämpöistä vettä

Siivilöi jauhot mieluiten työalustalle ja muodosta kasan keskelle kuoppa. Luulen että tämän voi ihan hyvin tehdä kulhossakin, työalustalla taikinaa on vaan helpompi työstää. Sekoita erillisessä kulhossa lämmin vesi, hiiva, suola, sokeri ja öljy. Kaada neste jauhoihin parissa osassa ja vaivaa seosta kunnes lopputulos on kiinteähkö taikina. Laita taikina kulhoon, peitä kostealla liinalla ja jätä lämpimään paikkaan kohoamaan n. 40 minuutiksi. Kun taikina on noussut kaksinkertaiseksi siirrä se työalustalle ja vaivaa kunnes kaikki ilma on taikinasta kadonnut. Jaa taikina 6-8 osaan ja työstä pizzapohjiksi. Levitä hieman tomaattikastiketta pohjan päälle, lisää täytteet mielesi mukaan ja paista pizzoja uunissa täydellä teholla kunnes pohja on rapea. Paistoaika riippuu täysin uunista. Meillä pizzaa kohti meni n. 20 minuuttia.

Helppo Tomaattikastike Pizzalle

4-5 valkosipulinkynttä
3-4 rkl oliiviöljyä
2 prk tomaattimurskaa
ripaus suolaa
ripaus sokeria
ripaus mustapippuria
tuoretta basilikaa

Kuullota hakattu valkosipuli öljyssä, varo ettet ruskista. Lisää loput aineet ja anna hautua liedellä ainakin n. tunti.


For the last couple of weeks have gone without any kind of blogging whatsoever. We've been on a holiday in Finland, and also I've also tried to enjoy a bit of summer so just haven't really had time.

This weekend we got together with friend and organised a proper pizza-party. What a brilliant team effort it was! The dough came together really quickly, we made a great tomato sauce, and all the individual 8 pizzas turned out to absolutely delicious in the end. We were a bit doubtful whether a normal electric oven would make the base crispy enough, but they were perfect!


For the dough we used Jamie Oliver's recipe, and please remember to use the "00" flour. It really makes a difference. From this recipe we made 8 pizzas, and as mentioned we baked them in a normal oven. We put the temperature to the top, and the cooking time depends on the oven. For us a pizza took about 20 minutes.

Easy Tomato Sauce for Pizza

4-5 garlic cloves
3-4 tbsp olive oil
2 cans of chopped/plum tomatoes
pinch of salt
pinch of sugar
pinch of black pepper
fresh basil

Fry the garlic in the olive oil, please make sure not to brown/burn. Add rest of the ingredients and let it simmer for at least an hour.
