Little Prawn Delights



No huh-heijaa, on tosiaankin pidetty hieman taukoa postailuista viime aikoina. Kokkailtu on, mutta jostain syystä tekstiä ei vaan ole oikein irronnut. Nyt on taas kuitenkin tämä kevät-aurinko piristänyt sen verran että tässäpä teille ihan tosi kiva katkis-herkku. Nämä Filippiiniläiset katkarapu-pallot ovat alunpitäen "New Asian Cooking" vihkosesta jonka Singaporen vaihto-oppilas vuotenani nappasin ihan viime päivinä paikallisesta supermarketista.

Katkarapu-palloset

300g raakoja katkarapuja
1 kananmuna
185ml vettä
1 rkl Thai-kalakastiketta
125g vehnäjauhoja
1/4 katkaraputahnaa
3 kevätsipulia
1 punainen chili
50g riisinuudeleita

öljyä uppopaistamiseen

Aja puolet ravuista tehosekottimella tahnaksi ja leikkaa loput pieniksi paloiksi ja sekoita tahnan joukkoon. Sekoita muna, vesi ja kalakastike. Kaada toiseen kulhoon jauhot, ja lisää muna-seos sekoittaen kunnes lopputulos on löysähkö taikina. Lisää katkaravut, silputut kevätsipulit ja chilit ja keitetyt, jäähdytetyt ja 3cm pituisiksi pätkiksi leikatut riisinuudelit taikinan joukkoon ja sekoita. Kuumenna öljy wokissa kuumaksi ja lusikoi taikinasta pieniä palloja ja tiputa varovasti öljyyn paistumaan. Paistele palleroita n. 3 minuuttia tai kunnes kullanruskeita ja rapeita. Muista olla varovainen kuuman öljyn kanssa!

Oh well, it has really been a while! We've been cooking, but for some reason I just haven't had an inspiration to write down anything. However, I think that the spring and the lovely sunshine has given again a bit more energy and I thought to share this recipe for delicious little Philippine prawn balls. The recipe comes from a little book called "New Asian Cooking" which I picked up long time ago from a supermarket in Singapore on my last couple of days as an exchange student.

Prawn Fritters

300g raw prawn
1 egg
185 ml water
1 tbs fish sauce
125g plain flour
1/4 tsp shrimp paste
3 spring onions
1 red chilli
50g dried rice vermicelli

oil for deep frying

Process half of the prawns in the food processor until smooth. Chop the remaining prawns and mix, in a bowl, with the processed prawns. In a small bowl, beat the egg, water and fish sauce. Place the flour to another bowl and pour in the egg-mix and stir until smooth. Add the prawn mixture as well as the chopped spring onions and chilli, and rice vermicelli which has been boiled and chopped into 3cm pieces. Mix until well combined. Heat the oil in a wok and drop tablespoonsful of mixture in it and fry for 3 minutes or so. Be careful with the hot oil!
