Goan Fish Curry



No kylläpä meillä ollaankin nyt kokattu currya curryn perään viime aikoina. Eikö ilmojen lämmetessä pitäisi tehdä mieli jotain raikasta ja tuoretta? No erinlaisia curryja on nyt kuitenkin syntynyt meidän keittiössä viime viikkoina, ja tehosekoitin on laulanut kun olen kaikenlaisia tahnoja pistänyt kokoon. Eilen kaupasta tarttui mukaan pari kala-filettä, ja T pyysi josko näistä taas jonkinlainen curry syntyisi. Camellia Panjabin "50 Great Curries of India"-kirjasta löytyi kivan näköinen Goalainen-curry ja vaikka vähän alkuperäsistä reseptiä muutinkin, lopputulos oli kivan raikas!

Goalainen kala-curry

500g kalaa
1/2 limetin mehu
2 sipulia
4 valkosipulinkynttä
8 kuivattua chiliä
3 tl korianterin siemeniä
1tl juustokuminan siemeniä
1 tl kurkumaa
3 rkl tamariini-tahnaa
3 linnunsilmä-chiliä
1 purkki kookosmaitoa
1 iso tomaatti
suolaa
pippuria
tuoretta korianteria

Leikkaa kala isohkoiksi paloiksi ja laita marinoitumaan limetinmehun, ripauksen kurkumaa ja suolan sekä tilkan vettä kanssa puoleksi tunniksi. Liota kuivattuja chilejä n. 15 minuuttia kuumassa vedessä ja laita sitten tehosekoittimeen. Lisää yksi kuutioitu sipuli, valkosipulinkynnet, korianterin- sekä juustokuminan siemenet, 1 rkl tamariini-tahnaa, tilkka vettä ja öljyä ja aja tasaiseksi tahnaksi. Siivuta toinen sipuli ohuiksi siivuiksi ja kuullota pannulla n. 3 minuuttia. Lisää tahna ja paistele n. 10 minuuttia. Lisää kookosmaito, linnunsilmä-chilit, loput tamariini-tahnasta, suola, pippuri ja raastettu tomaatti. Keittele curryä kokoon n. 10 minuuttia, kuivaa kalat marinadista ja lisää kastikeeseen. Keittele n. 10 minuuttia tai kunnes kalat ovat kypsiä, sekoita joukkoon kourallinen tuoretta korianteria.

Yes, there has been quite a few curries cooked in our kitchen within the last couple of weeks. Aren't I supposed to feel like having something fresh and light when the weather gets warmer??!! Anyway, for some reason I have been cooking several different kind of curries lately and the blender has been busy blending various different pastes. Yesterday we got some fresh fish from the supermarket and T asked whether we could cook another curry from it. I found a nice looking Goan Curry from Camellia Panjabi's "50 Great Curries of India" - book and even though I changed a recipe a bit, it ended up being actually quite fresh and a bit different than your usual Indian curry.

Goan Fish Curry

500g fish
juice of 1/2 lime
2 onions
4 cloves of garlic
8 dried chilies
3 tsp coriander seeds
1 tsp cumin seeds
1 tsp tumeric
3 tbsp tamarind pulp
3 birds eye chilies
1 can of coconut milk
1 tomato
salt
pepper
fresh coriander

Cut the fish into quite big chunks and mix together with lime juice, pinch of tumeric, salt and little bit of water. Leave to marinade for 30 minutes. Soak the dried chilies for 15 minutes and then put in the blender. Add one chopped onion, garlic cloves, coriander- and cumin seeds, left of the tumeric, one tablespoon of tamarind paste and little bit of oil and water. Blitz until smooth paste. Cut the remaining onion into fine slices and fry in a pan until soften. Add the curry paste and fry for another 10 minutes or so. Pour in the coconut milk, the birds eye chilies, grated tomato, rest of the tamarind paste, and salt and pepper and let it bubble gently for 10 minutes. Drain the fish from the marinade and add to the curry. Boil until the fish is fully cooked and in the end add handful of fresh coriander.
