Musaman Beef Curry


New Asian Cooking - kirjasta löytyi toinenkin kivan näköinen resepti mitä halusin testailla ja eräs Sunnuntai illalliseksi syntyi Musaman Beef Curry. Pelkäsin että koska curryä ei kovin kauaa haudutella, liha jäisi ikävän sitkeäksi. Näinpä ei kuitenkaan käynyt, koska lihana tässä reseptissä käytetään Rum Steak:iä (välikyljys?) ja tämä pysyi tosi mehukkaana ja pehmeänä vaikka pata olikin mitei puolessa tunnissa valmis.

Musaman Beef Curry

Curry tahna

1 rkl korianterin siemeniä
1 rkl juustokuminan siemeniä
1/2 tl kardemummaa
2 rkl kokonaisia mustapippureita
1 rkl katkarapu-tahnaa
1 tl muskottipähkinää
1/2 tl jauhettua neilikkaa
15 kokonaista kuivattua chiliä
1-2 salottisipulia
2 sitruunaruohoa
6 valkosipulinkynttä

500g Rum Steak:iä (välikyljystä)
2 sipulia
4 isohkoa perunaa
600ml kookosmaitoa
1/4 tl jauhettua kanelia
1 kanelitanko
2 rkl tamariini-tahnaa
3 tl ruskeaa sokeria
125ml vettä
kourallinen suolapähkinöitä

Paahda kuivalla, kuumalla pannulla korianterinsiemenet, juustokuminat, kardemummat ja mustapippurit n. 3 minuuttia. Kaada siemenet huhmareeseen ja jauha jauheeksi. Aja tahnan loput ainekset tehosekoittimessa tahnaksi ja lisää lopuksi jauhetut mausteet.
Kuumenna pannussa hieman öljyä ja paista kuutioituihin lihoihin pikaisesti väri. Nosta pois pannusta ja jätä sivuun. Lisää samaiseen pannuun 2-3 rkl curry-tahnaa ja paistele n. minuutti. Lisää leikatut sipulit ja kuutioidut perunat ja sekoittele pari minuuttia kunnes sipulit ovat ottaneet vähän väriä. Lisää lihat takaisin pannuun ja sekoita joukkoon kookosmaito, kanelit, tamariini-tahna, sokeri ja vesi. Kiehauta ja jätä sitten porisemaan miedolle lämmölle n. 20 minuuttia kunnes perunat ovat kypsiä. Sekoita lopussa joukkoon suolapähkinät ja tarjoile riisin kera.


I found another nice recipe from the New Asian Cooking-book and one Sunday we had a nice Musaman Beef Curry for dinner. I was worried that the meat would be tough as the curry is ready in 20 minutes, but because the recipe uses rump steak, it actually stayed really nice and tender.

Musaman Beef Curry

Curry Paste

1 tbsp coriander seeds
1 tbsp cumin seeds
1/2 tsp cardamon seeds
2 tbsp black peppercorns
1 tbsp shrimp paste
1 tsp nutmeg
1/2 tsp ground cloves
15 dried chillies
2 shallots
2 lemon grasses
6 cloves of garlic

500g rump steak
2 onions
4 big potatoes
600 ml coconut milk
1/4 tsp ground cinnamon
1 cinnamon stick
2 tbsp tamarind paste
3 tsp brown sugar
125 ml water
handful of roasted peanuts

Dry-fry the seeds in a hot pan for 3 minutes. Pour into mortar and pestle an grind until fine. Mix the remaining paste ingredients in a food processor into a paste and add the finely grind seeds. Fry the cubed meat in a hot pan until they've taken colour, and then set aside. In the same pan, fry 2-3 tablespoons of the curry paste for a minute. Add the chopped onions and potatoes and fry until onions have taken some colour. Pour the meat back in the pan. Stir in the coconut milk, cinnamons, tamarind-paste, sugar and water. Bring to boil, reduce the heat and let it simmer for 20 minutes or until potatoes are ready. In the end stir in the peanuts and serve the curry with hot rice.
