Monsieur Runeberg

Olen viimeksi syönyt Runebergin-torttuja melkein kuusi vuotta sitten.

5th February in Finland is dedicated to a gentleman called Mr. Runeberg. He was one of our national poet's and for example lyrics of our national anthem are by him. We tend to have these dedicated days for many different authors, poets, and we even have a day dedicated to our national epic "Kalevala". Most of the time these days are just another mark in our calendar and normally just maybe looked into in schools, but Mr. Runeberg's day is also linked to these lovely cakes. Apparently his wife used to make these to him, and nowadays you can buy these from supermarkets in Finland around 5th February every year. They are moisten with this Swedish alcohol called Punsch, which is kind of Arrack Liqueur.

They didn't come out exactly perfect looking and instead of Punsch I had to use rum, but all and all I was very happy about them. Last time I've eaten them is more than 5 years ago!

Runeberg's Cakes

150g butter
1,5 dl sugar
2 eggs
1 dl grounded almond
0.5 dl chopped hazelnuts
0.5 dl crushed biscuits
1,5 dl flour
1 tsp baking powder

Punsch or Rum
raspberry jam
icing sugar
water

Beat the butter and sugar together until smooth. Add eggs one by one mixing very well. Mix all the dry ingredients together and add to the egg-sugar mix. Divide the batter into muffin tray and bake in the oven 200c for 13 - 15 minutes.

Let the muffins to cool and moist them with a little bit of alcohol. Mix the icing sugar and water into thick paste, and draw with it little rings on top of the muffins. Add little bit of raspberry jam in the centre of the rings and enjoy!

  1. Nam! Minäkin himoiten katsoin Hesarin sivuilla olevaa ohjetta viime viikolla, mutta ainakaan tänä viikonloppuna en vielä ehtinyt leipomispuuhiin.
