Siken avulla sukkelaan


Kaveri oli tulossa kyläilemään ja kauppaan ei ehtinyt. Mietin että mitä ihmettä nyt tarjoaisin kun hedelmä-kulhossakin pötkötteli vain yksinäinen banaani mikä sekin oli menossa pikku-pötkylälle jugurtin sekaan.

Googlailin pikaisesti netistä nopean mantelikakun reseptin, jonka alkuperä ilmeisesti kuuluu Sumarin Sikelle. Ei yhtään pöllömpi kakku, ja todellakin nimensä veroinen pika-leipomus. Kaikki aineet kulhossa vain sekaisin ja uuniin. Jauhettujen manteleiden sijasta käytin mantelilastuja jotka eivät ihan täysin kyllä toimineet samalla tavalla, mutta ihan hyvää tuli silti. Ripottelin myöskin kakun päällä oleville mantelilastuille hieman sokeria ennen uuniin laittoa, ja se toi kakulle kivan rapeahkon pinnan.

Tarjosin kakun anopin morello-kirsikkahillon ja creme fraichen kanssa, ja eihän se ystävä sitten loppujenlopuksi päässytkään kylään ja kakku täytyi syödä ihan yksikseen teekupin kanssa sohvalla nököttäen ja nauttien hiljaisuudesta mini-tyypin nukkuessa päikkäreitä. Ei hassumpaa!

My friend was coming for a visit one day and I just didn't have time to go to the shop. I was wondering what on earth I could offer her as the fridge looked pretty empty and in the fruit bowl there was just one sad little banana left, which was anyway heading to the little dude's yoghurt later on. 

I did a quick Googling and found a recipe which apparently was originally by Finnish celebrity cook, Sikke Sumari. This was super quick and easy and you just basically had to mix everything together and chuck it in the oven. Instead of ground almonds I used sliced ones which didn't work as well in my opinion, but the cake was still nice. I also sprinkled some caster sugar on top of the cake before putting it into the oven which gave it a lovely crispy crust.

I served the cake with my mother-in-law's morello cherry-jam and some creme fraiche. My friend never actually made it and I had to eat the cake by myself, with a cup of tea and enjoying the silence while the little dude was having a nap. Not bad at all!

Almond cake

200g melted butter
3dl flour
1dl ground almonds
2dl caster sugar
1 tsp baking powder
150ml milk
1 egg
10 drops of almond extract

Mix all the dry ingredients together. Add melted butter, milk and egg and mix. Pour the cake into a tin, sprinkle with sliced almonds and little bit of caster sugar and bake in 175c for 30 minutes or when the cake is golden brown and the stick that you poke it with comes out clean.
