Squid Salad with Mint and Coriander



Suoraan Rick Steiniltä otettu mustekala-salaatin resepti. Oli niin hyvää että meillä meni vadillinen salaattia hetkessä ja kastikkeen rippeet vielä erikseen lusikasta hörpittynä. Paahdettu riisi oli ihan jännä lisä, ja lisäsin kastikkeseen hieman soijakastiketta tuomaan ihan vähän lisää makua. Ja olisiko ehkä aika ostaa uusi tarjoilu-astia? Kyseinen kupari-vati taitaa olla täällä miltein joka toisessa kuvassa...

Recipe for this Squid salad was taken straight from Rick Stein at Saturday Kitchen. It was so nice that we demolished a bowlful of salad in a minute and even slurped the left-over dressing with a spoon happily afterwards. Roasted rice was a nice touch and I added some soy sauce to the dressing to bring some more depth. Do you think it's time to get a new serving dish? This copper one seems to be in every other picture here...

Moules Marinieri


Simpukka-kausi on taas täällä! Kaupoista löytyy kivasti tuoreita simpukka-pusseja ja Perjantain kunniaksi tekaisimme perinteisen Moules Marinieri:n. Paistoin simpukoiden seuraksi ranskanperunoita, mutta hei, onnistuin polttamaan ne! En muista milloin viimeksi uuniin on hujahtanut perinteiset ranut, joten ranskisten ajoitus on näköjään jäänyt ihan unholaan. Kunnon kokki-kolmonen...

Moules Marinieri

2 kg simpukoita

2 rkl voita
2 salotti-sipulia
3 valkosipulinkynttä
1 laakerinlehti
pari timjamin oksaa
pieni kourallinen persiljan-varsia

1.5 dl valkoviiniä
1 dl kermaa

kourallinen lehtipersiljan lehtiä

Pese simpukat kunnolla ja raaputtele "parrat" ja epäpuhtaudet pois kuorista. Heitä kaikki simpukat pois jotka eivät sulkeudu kun niitä koputtaa hieman pöytää vasten. Sulata voi isossa kattilassa. Silppua salotit, valkosipulit ja persiljan varret hienoksi ja lisää kattilaan laakerinlehden ja timjamin kera. Kuullota pari minuuttia ja lisää sitten simpukat sekä valkoviini. Nosta lämpötila ja sulje kattila kannella. Anna simpukoiden porista n. 3 - 4 minuuttia ja ravistele välillä. Kun kaikki simpukat ovat avautuneet, ota kattila pois liedeltä ja kaada joukkoon kerma ja lehtipersilja. Tarjoa heti.


Mussel season is here! You can find nice and fresh mussels in the supermarket at the moment, and for Friday we decided to give the legendary Moules Marinieri a go. I wanted to have some chips with them, but ended up burning them in the oven! Obviously it has been too long from the previous time of my oven chips and the timing just went so wrong. What a chef...

Moules Marinieri

2 kg mussels

2 tbsp butter
2 shallots
3 garlic cloves
1 bay leave
couple of sprigs of thyme
little handful of parsley stalks

150 ml white wine
100 ml double cream

handful of flat leaf parsley

Wash the mussels properly and scrub the "beard" and any barnacles off. Throw away all the mussels that don't close when you knock them gently against table. Melt the butter in a sauce pan. Chop the shallots, garlic and parsley stalks finely and add them to the sauce pan with bay leaf and thyme. Fry gently for couple of minutes and add the mussels and white wine. Put the heat up, cover the sauce pan with a lid and let it boil for 3 - 4 minutes. Shake the pan once in a while. After all the mussels have opened, take the pan from the heat and add the cream and parsley. Serve immediately.

Scandinavian Cheese On Toast



Miksi lämpimät voileivät ovat aina niin kivoja? Jotenkin niissä on aina semmoinen lämpöisen lempeä tunnelma ja ihan parasta "comfort"-ruokaa viltin alla mutusteltaessa. Muistan joskus Suomessa aikoinaan tehneeni lämppäreitä Balkan-makkarasta (kyllä!) ja tomaattisiivuista ja saunan jälkeen ne tuntuivat ihan parhaimmalta asialta maailmassa. Nämä vähän tuunatummat voileivät toimivat melkein yhtä hyvin ja raikkaan salaatin kanssa ne ovat mukavia vaikka lounas-leipinä. Perheen hiilarittomalle tehtiin voileipien sijaan täytettyjä kesäkurpitsoja samalla täyttellä.

Skandinaavin Lämpimät Leivät

6-8 paahtoleipää
300g katkarapuja
200g creme fraichea
iso kourallinen raastettua Cheddar-juusto
2 pientä kevätsipulia
1 rkl Dijon-sinappia
1/2 sitruunan mehu
1 keltuainen
kourallinen tuoretta tilliä
suolaa
pippuria

Silppua kevätispulit pieneksi ja sekoita kaikkia ainekset keskenään. Paahda leivät paahtimessa ja asettele uunipellille. Levitä täyte leiville ja paista 200c uunissa n. 10-15 minuuttia, ja käytä lopussa leipiä pari minuuttia grillin alla.

In Finland we make these warm open sandwiches and thinking of them brings back very fond memories. They are more or less like cheese on toast, but you can basically cover the sandwiches with whatever and then just warm them in the oven. For me they are proper comfort-food and best especially after sauna. These ones that I made the other day are a bit fancier ones, and quite nice for example with fresh salad. I made some stuffed courgettes with the same filling for the family's non-carb-eater, and I think they were quite nice too.

Scandinavian Cheese On Toast

6-8 slices of toast
300g small prawns
250g creme fraiche
big handful of grated Cheddar
2 spring onions
1 tbs Dijon-mustard
juice of 1/2 lemon
1 egg yolk
handful of fresh dill
salt
pepper

Chop the spring onions and mix all the ingredients together. Toast the bread slices and place in the oven tray. Spread the filling on toasts and bake in the 200c oven for 10-15 minutes and in the end place under the grill for a minute or two.

Hiljaiseloa



Blogirintamalla on ollut aika hiljaiseloa viime aikoina. Ei olla juuri kokkailtu, en oikein tiedä miksi. Kattoterassin grilli on kyllä käynyt kuumana, mutta ei sieltäkään mitään sen ihmeempiä ole syntynyt. Ehkä tämä tästä taas muuttuu vähän aktiivisemmaksi, eilen keittiöstä putkahti Pad Thai-tyyppinen ateria. Ihan hyvää oli, ei mitenkään erikoista kuitenkaan. Mulla tuppaa aina wokin kanssa syntyä pientä paniikkia. Kaikki valmistuu niin nopeaa että pelkään aina polttavani kaiken, tai kypsyttävän aineksia ihan liikaa. Tämä on ehdottomasti taitolaji. T on aikamoinen wokki-mestari, ihan epäreilua!

Muuten, alhaalla kuva maailman parhaasta chilikastikkeesta. Tätä on viimeiset 3 vuotta löytynyt meiltä jääkaapista. Ilman sitä ei vaan yksinkertaisesti selviä. Jos löydätte, ostakaa ihmeessä!

Pikainen Pad Thai

2 kananmunaa
seesami-öljyä

3 valkosipulinkynttä
tuoretta chiliä maun mukaan
tuoreita jättikatkarapuja
5 kevätsipulia varsineen
pari kourallista pavun ituja
tuoretta korianteria

3 rkl Thai kala-kastiketta
1 rkl tamariini-tahnaa
1 limen mehu
1 tl ruskeaa sokeria

3 rkl suolapähkinöitä

Pad Thai riisinuudeleita

Silppua kaikki ainekset valmiiksi ennen kokkailua, annos syntyy super-nopeaa. Riko kananmunat kulhoon, lisää seesami-öljy ja sekoita. Paista pannulla kunnes koostumus on kiinteä munakokkeli, ja siirrä sivuun jäähtymään. Keitä nuudelit ohjeen mukaan ja jätä sivuun jäähtymään. Kuumenna wokki tosi kuumaksi ja paista pienessä öljyssä valkosipulit ja chilit n. 30 sekuntia. Jos käytät raakoja katkarapuja lisää ne tässä vaiheessa (jos et, ravut tulevat joukkoon vasta lopussa). Lisää wokkiin siivutetut kevätsipulit ja pavunidut (ja kypsät katkaravut jos niitä käytät) ja pyöräytä pari kertaa kunnes ainekset ovat lämmenneet. Lisää nuudelit ja mausteet ja paistele parisen minuuttia. Lopuksi ripottele joukkoon rouhitut suolapähkinät ja silputtu korianteri ja nauti.


It's been quite quiet here at the blog lately. We haven't been really cooking properly for the last week or so, don't know why. The BBQ at the roof has been used quite actively though, but nothing exiting has come out from there either. Perhaps we become a bit active soon again, yesterday we for example made kind of a Pad Thai - style dish. It was ok, nothing spectacular. I always tend to panic a bit when it comes to cooking with the wok. Everything happens so fast, so I always worry that I burn everything or cook the stuff too long. This definitely requires some practice. T is extremely confident with his wok. So unfair!

By the way here's a picture of the world's best chili sauce. For the last 3 years we have had this in our fridge, you just can't live without it. If you find it, try it!

Quick Pad Thai

2 eggs
sesame oil

3 gloves of garlic
fresh chilli
king prawns
5 spring onions
couple of handfuls of bean sprouts
fresh coriander

3 tbsp Thai fish sauce
1 tbsp Tamarind-paste
juice of 1 lime
1 tsp brown sugar

3 tbsp salted peanuts

Make sure you chop everything ready before cooking, the dish is finished within minutes! Break the eggs in a bowl, add sesame oil and whisk. Fry in a pan until consistency is firm scramble. Set aside to cook. Boil the noodles, and set aside to cool as well. Heat the wok very hot and fry the garlic and chillies about 30 seconds. If you're using fresh prawns add them to the pan now (if not, the cooked ones are added in the end). Add the chopped spring onions and bean sprouts and toss couple of times until they are heated. The add the noodles, rest of the ingredients (and cooked prawns if you're using them) and fry couple of minutes. In the end garnish with chopped coriander and chopped salted peanuts.

Company Shed



Ystävä-pariskuntamme on kertonut meille tietystä kala-ravintolasta joka sijaitsee hieman Lontoon ulkopuolella, ja Lauantaina sään ollessa mitä mainioin päätimme vihdoin käydä katsastamassa sen. Otimme aamulla junan Colchersteriin, ja n. 50 minuutin päästä saavuimme asemalle josta hyppäsimme taksiin ja suuntasimme Mersey-saarelle. Merseylle pystyy ajamaan autolla, mutta on hyvä tietää mihin aikaan nousu- ja laskuvesi tulevat koska näinä aikoina saarelle tai sieltä pois ei pääse. Asemalta saarelle kesti n. 15 minuuttia taksilla, ja kuskimme jätti meidät satamaan jossa ihastelimme veneitä ja ylipäätään hyvin leppoista Lauantai-menoa.


Satamassa sijaitsee monta kivaa pientä pubia ja ravintolaa, mutta me suuntasimme paikkaan nimeltä 'Company Shed'. Nimensä mukaan ravintola on hyvinkin pelkistetty, ja on selvää että pääosaa tässä paikassa näyttelee ruoka.


Ulkona odotti jo melkoinen kasa ihmisiä, ja meille kerrottiin odotus-ajan pöydälle olevan n. tunti. Pistimme nimemme listalle ja suuntasimme rannalle nauttimaan auringosta ja mukanamme tuomasta kuohuviinistä. Ravintola tosiaan tarjoaa pelkästään kalaa ja mereneläviä, ja tarjolla on mitä aamulla mereltä on kalastettu. Jos tämän lisäksi haluaa jotain muuta, se on tuotava itse. Me toimme mukanamme pari pulloa hyvää valkoviiniä, tuoretta leipää, voita, majoneesia ja Tabascoa.



Noin tunnin odottelun jälkeen meidät ohjattin pöytään, ja tässä vaiheessa meillä oli jo selvät sävelet mitä halusimme tilata. Otimme pari isoa merenelävä-tarjotinta, jossa tarjolla oli mm. kokonaista taskurapua, simpukoita, tuoreita katkarapuja kuorittuina ja kuorineen, savumakrillia ja kylmäsavulohta. Tilasimme näiden lisäksi myöskin sydänsimpukoita, tuoreita sekä grillattuja ostereita, grillattuja kampasimpukoita, ja grillattuja tiikerirapuja.


Siis apua! Ruoka oli aivan mahtavaa. En varmaan ikinä ole syönyt niin tuoreita mereneläviä kuin eilen. Kuten mainitsin, puitteet ravintolassa ovat hyvin pelkistetyt mutta tänne ihmiset eivät tule hienostelemaan. Täällä syödään käsin, imeskellään äänekkäästi ja nauretaan isoon ääneen. Palvelu on iloista, ja laskun tullessa alkoi ihan naurattamaan. Neljän ihmisen tajuttoman kokoinen merenelävä-juhla tuli maksamaan alle £16/henkilö!!


Ruoan jälkeen käveleskelimme ympäriinsä ja katselimme paikallisia lapsia ravustamassa taskurapuja satamassa. Iltapäivä-drinkki paikallisessa pubissa kruunasi päivän, ja junassa takaisin Lontooseen istui neljä hyvin iloista ja tyytyväistä hyvän ruoan ystävää. Miten ihana tapa viettää keväinen Lauantai! Our friends have told us about a delicious restaurant a bit outside of London, and last Saturday we decided to finally go and check it out. The weather was beautiful and in the morning we jumped in to a train to Colchester. After 50 minutes journey we arrived, had a taxi waiting for us at the station and headed to the Mersey island. You can get to Mersey with a car, but be sure to check the times for the tide, otherwise you might get stuck! Our driver left us at the harbor, where you can find nice little pubs and restaurants, but we were heading to a place called Company Shed.

As the name implies, there's nothing fancy about this place. This is the real stuff, and it's obvious that the main focus in this place is the food. There were quite a few people already waiting outside when we arrived, and we were told that the waiting time for a table would be about an hour. We put our names in the list and headed to sit by the sea and enjoy the sun and a bottle of Cava that we brought with us. The restaurant itself only serves seafood and if you want any extras you need to bring it with you. We had a little cool bag with us and brought couple of bottles of nice white wine, some bread, butter, mayonnaise and tabasco sauce.

After an hour they had a table for us, and by that time we knew more or less already what we wanted to order. We ordered couple of seafood platters that included e.g. whole crab, whole as well as peeled prawns, mussels, and smoked mackerel and salmon. On top of this we got some cockles, fresh and grilled oysters, fried scollops and grilled tiger prawns.

Oh My God. I can't remember if I have ever had that fresh seafood. The food was gorgeous! As mentioned before, the place itself is very basic but that's the whole point of it. This is not a place to come and be poncy. Here you eat with your fingers, make loads of slurping noises and laugh out loud. The service is great and I started to laugh when seeing the bill. A massive seafood feast for four people cost less than £16/head!

After lunch we walked around in the harbor and watched the local kids catching some crabs from the sea. Nice afternoon drink in a local pub finished the day and on the train back to London sat four very happy and content food-lovers. What a fantastic Saturday, I truly recommend!

Frittata


Kiireet sen kuin jatkuvat, mutta tämä viikko on tuonut tullessaan kivoja uutisia ja ylipäätään mukavaa joulun odotusta. Tällä viikolla piipahdan kolmissa pikkujouluissa, lopettelen työprojektini, ostan miltei kaikki joululahjani ja pakkaan kamani ja lennän Suomeen. Miksi aina täytyy jättää kaikki niin viime tinkaan?Mutta ehkäpä juuri tämän kaiken hässäkän jälkeen, tuntuu aina niin ihanalta sitten vaan tupsahtaa Suomeen ja rentoutua joulun viettoon.

Eilen tultiin kotiin vasta aika myöhään, joten pistimme kokoon vaan pikaisen fritattan katkaravuista ja chorizosta. Paistoin chorizo-paloja pannulla sipulin kanssa. Lisäsin kourallisen tuoretta pinaattia, pari viipaloitua perunaa ja kynnen valkosipulia joukkoon ja sekoitin. Vatkasin 6 munaa kulhossa ja lisäsin lurauksen kermaa ja suolaa ja pippuria. Kaadoin pannulle chorizon ja pinaatin päälle, ripottelin päälle katkaravut ja hieman tuoretta timjamia ja pistin uuniin grillin alle pariksi minuutiksi kunnes päällys oli hyytynyt. Syötiin rucolan kanssa.

Busy times are continuing, but this week has brought some great news and overall nice Christmas atmosphere to us. This week I have three Christmas parties to attend, have to finish my stuff at work for the year, buy most of the Christmas presents and pack my bags and fly to Finland. Why do we always have to leave everything to last minute? But perhaps because of all this rush and hurry, it is then so nice to arrive to Finland and relax and prepare for a lovely family Christmas. Yesterday we came home quite late, so we put together just an easy frittata with chorizo and prawns. I fried some chorizo in a pan with onions. I added handful of fresh spinach, couple of slized boiled potatoes and a crushed garlic. I mixed 6 eggs in a bowl with little bit of cream and salt and pepper, and poured on top of everything in a pan. I topped with prawns and some fresh thyme and placed it under a hot grill until the egg on top set. We enjoyed the frittata with some rocket.
